Lamb Cutlets with New Potatoes, Mint and Pea Puree

These classis flavours epitomise spring on a plate - lamb, peas, new potatoes and mint

Ingredients
6-8 lamb cutlets
1 clove garlic
2 sprigs rosemary
12 new potatoes
1 small bunch mint
300g frozen peas
20g butter
4 tablespoons olive oil
good splash of white wine
salt and pepper

Method
Strip the rosemary leaves off the stalks and finely chop together with the garlic. Sprinkle over the lamb cutlets with 2 tablespoons olive oil, salt and pepper. Leave to marinate for a few minutes.

Place the potatoes and the mint (keep some back to finish the dish) in a small pot with cold water and salt and bring to the boil. Cook for about 10 minutes until tender, drain off. Return the potatoes to the pan with 1 tablespoon olive oil and season with salt and pepper. Keep warm.

In another pot, bring water to the boil and blanche the peas (the brief cooking of vegetables to retain their colour and crispness) for 3 minutes. Drain through a sieve. Return to the pan; add the cube of butter and salt and pepper to taste. Blend with a stick blender to a puree or alternatively in a food processor.

Heat a frying pan on medium-high heat. Fry the lamb cutlets for 2 minutes on each side. Deglaze the pan with a splash of white wine to create a sauce. Serve the lamb cutlets with the new potatoes (sprinkled with the reserved mint leaves) and the pea puree. Spoon the lamb juices over the meat.

6-8 lamskoteletjes
1 teentje knoflook
2 takjes rozemarijn
12 nieuwe aardappeltjes
1 klein bosje munt
300g diepvries doperwten
20g boter
4 eetlepels olijfolie
zout en peper

Bereiding
Haal de blaadjes van de takjes rozemarijn en hak ze fijn samen met de knoflook. Bestrooi de lamskoteletjes met de gehakte kruiden, knoflook en 2 eetlepels olijfoiie, zout en peper. Laat enkele minuten marineren.

Doe de aardappeltjes samen met de munt (bewaar een paar blaadjes voor het afmaken van het gerecht) in een pannetje met koud water en zout, breng aan de kook. Kook ze in ongeveer 10 minuten gaar, giet ze af. Schep de aardappeltjes terug in de pan met 1 eetlepel olijfolie, zout en peper naar smaak. Houd ze warm.

Breng een ander pannetje met water aan de kook, blancheer hier de erwtjes in voor 3 minuten. Giet ze af in een zeef. Doe terug in de pan, voeg het cupje boter toe en breng op smaak met zout en peper. Pureer grof met een staafmixer.

Verhit een koekenpan op medium hoog vuur. Bak de lamskoteletjes voor 2 minuten aan elke kant. Blus af met een scheutje witte wijn. Serveer de lamskoteletjes met de nieuwe aardappeltjes (bestrooi met de resterende munt) en erwtenpuree. Lepel de jus van de lamskoteletjes over het vlees heen.


Rocket and Blue Cheese Soup

And easy, fresh and vibrant soup is given a zing with the addition of blue cheese.

Serves 2

Ingredients
1 clove garlic
1 shallot
350g rocket leaves
50g butter
1 organic vegetable stock cube
100g blue cheese
125g crème fraiche
2 floury potatoes
3 tablespoons olive oil
salt and pepper

Method
Finely chop the garlic clove and shallot. Peel the potatoes and cut into cubes. Dissolve the vegetable stock cube in 1,2 liters hot water. Crumble the blue cheese.

Heat a pan over medium heat with 3 tablespoons olive oil and the butter and sweat the shallot for 3 minutes. Add the garlic clove and fry for a further 1 minute.

Add the stock and potatoes and bring to the boil. Cook for 15 minutes until soft.

Add the rocket and three-quarters of the blue cheese and bring to the boil. Blend the soup with a stick blender or blender until smooth and season with salt and pepper.

Reheat the soup and spoon into a bowls. Dollop on some crème fraiche and sprinkle over the remaining blue cheese.

Delicious served with sourdough bread

1 sjalotje
350g rucola
50g boter
1 biologisch groentenbouillonblokje
100g blauwe kaas
125g creme fraiche
2 kruimige aardappels
3 eetlepels olijfolie
zout en peper

Bereiding
Snijd het sjalotje en knoflook fijn en los het groentenbouillonblokje op in 750 ml warm water. Schil de aardappels en snijd in stukjes. Kruimel de blauwe kaas.

Verwarm een pan op medium vuur met 3 eetlepels olijfolie en de boter en bak het sjalotje 3 minuten. Voeg de knoflook toe en bak nog een 1 minuut.

Voeg daarna de bouillon en aardappels toe en breng aan de kook. Kook 15 minuten totdat de aardappels zacht zijn.

Voeg de rucola en drie-kwart van de blauwe kaas toe en breng aan de kook. Pureer de soep glad met een staafmixer of in een blender en breng op smaak met zout en peper.

Warm de soep voorzichtig op en verdeel over kommen. Schep een lepeltje creme fraiche op de soep en kruimel de resterende blauwe kaas er overheen.

Heerlijk geserveerd met zuurdesembrood


Honey Mustard Chicken with Savoy Cabbage

The classic flavours of honey and mustard characterise this chicken dish. Give it a spring twist with tarragon and savoy cabbage and you have a winner of a dish.

Serves 2

Ingredients
2 chicken Maryland’s (one piece with the drumstick and thigh attached)
400g new potatoes
125ml cream
1 tablespoon wholegrain mustard
1 small bunch tarragon
1/2 or a small savoy cabbage
75g pancetta pancetta
4 tablespoons olive oil
120ml white wine
1 tablespoon honey
salt and pepper

Method
Preheat an oven to 200°C. Remove the outer leaves from the savoy cabbage. Cut the cabbage into quarters, remove the hard core and shred the leaves into thin strips.

Place the baby new potatoes in a pan of salted water, bring to the boil and cook for 5 minutes.

Season the chicken Maryland’s with salt and pepper. Heat a frying pan with 2 tablespoons olive oil and fry the chicken until golden on all sides. Finley chop the tarragon leaves. Deglaze with 120 ml white wine and cook until reduced by half. Add the cream, half the tarragon, mustard and 1 tablespoon honey. Cover and place in the oven for 10 minutes. Add the potatoes and return to the oven for about 15 minutes.

Heat a frying pan with 2 tablespoons olive oil. Cut the pancetta into thin strips and fry until golden brown. Remove from the pan and set aside. Add the cabbage and sweat for 10 minutes. Add the pancetta and season with salt and pepper.

Remove the chicken from the oven. Divide the cabbage between 2 plates. Lay the chicken and potatoes on top, spoon over the sauce and sprinkle with the remaining tarragon.

2 kippenpoten
400g nieuwe aardappeltjes
125ml slagroom
1 eetlepel grove mosterd
1 klein bosje dragon
1/2 of een kleine savooiekool
75g pancetta
4 eetlepel olijfolie
120ml witte wijn
1 eetlepel honing
zout en peper

Bereiding
Verwarm oven voor op 200 C. Haal de buitenste bladeren van de savooiekool. Snijd de kool in vieren, snijd de harde kern eruit en snijd de kool in dunne reepjes.

Doe de krielaardappeltjes in een pannetje met water en zout, kook ze 5 minuten.

Bestrooi de kippenpootjes met zout en peper. Verwarm een koekenpan met 2 eetlepels olijfolie en bak de kippenpoten rondom goudbruin. Snijd de dragonblaadjes fijn. Blus de kip af met 125 ml witte wijn. Laat voor de helft inkoken,  voeg dan de slagroom, de helft van de dragon, mosterd en 1 eetlepel honing toe. Dek de pan af en zet de pan in de oven voor 10 minuten, voeg dan de aardappeltjes toe en zet de pan terug voor nog eens 10 minuten.

Verwarm 2 eetlepels olijfolie in een koekenpan. Snijd de pancetta in dunne reepjes en bak ze goudbruin. Haal ze uit de pan en zet opzij. Smoor de kool in de koekenpan voor 10 minuten. Voeg de pancetta toe aan de kool en breng op smaak met zout en peper.

Haal de pan uit de oven. Verdeel de kool over 2 borden. Leg de kip en aardappelen er bovenop en lepel over de saus en bestrooi met de resterende dragon.


White Asparagus with Parmesan Fondue, Poached Egg and Prosciutto

A twist on the classic white asparagus and poached egg. Instead of the classic Hollandaise, we've paired it with Italian flavours of Parmesan and Prosciutto.

Serves 2

Ingredients
10 white asparagus
1 clove garlic
50g grated Parmesan
125ml cream
2 eggs
6 slices prosciutto
50g baby spinach
4 tablespoons olive oil
100ml white wine
20g butter
1 teaspoon sugar
capful white wine vinegar
salt and pepper

Method
Bring a pan of water to the boil for the eggs. Peel the asparagus with a vegetable peeler and cut a piece of the base off. Reserve the asparagus peelings.  Finely grate the garlic clove.

Heat a pan with 100 ml white wine and the grated garlic. Bring to the boil and reduce by half. Add the cream and cook to reduce slightly. Add half the Parmesan and whisk until smooth. Season with salt and pepper and set aside.

Place the asparagus in a pan with cold water; add salt to taste, 20 g butter and 1 teaspoon sugar. Lay the peelings over the asparagus so that they stay submerged. Bring to the boil and cook for 1 minute. Turn off the heat and leave the asparagus, covered with a lid, to cook through in the hot liquid, about 7-10 minutes depending on their size.

Add a capful of white wine vinegar to the pan of gently simmering water. Crack the eggs into a cup and add carefully to the simmering water. Poach for 2-3 minutes; the yolk should still remain soft. Remove from the water with a slotted spoon and drain on paper towel. Reheat the Parmesan fondue.

Remove the asparagus from the pan and drain on a tea towel. Divide the spinach between 2 plates and lay on the asparagus. Place the prosciutto slices around. Top the asparagus with a poached egg and spoon over the Parmesan fondue. Sprinkle over the remaining grated Parmesan and serve.

10 stukswitte asperges
1 teentje knoflook
50g geraspte Parmezaan
125ml  slagroom
2 eieren
6 pakjes proscuitto
50g jonge spinazie
4 eetlepels olijfolie
100ml witte wijn
20g boter
1 theelepel suiker
dopje witte wijnazijn
zout en peper

Bereiding
Breng een pannetje met water aan de kook voor de eieren. Schil de asperges met een dunschiller en snijd een stukje van de onderkant af. Bewaar de schilletjes. Rasp het knoflookteentje fijn.

Verwarm een pannetje met 60 ml witte wijn en de gesneden knoflook, kook voor de helft in. Voeg de slagroom toe en kook licht in. Voeg de helft van de Parmezaan toe en klop glad met eemn garde. Breng op smaak met zout en peper en zet opzij.

Doe de asperges in een pan met koud water en voeg zout naar smaak, 20 gr boter en 1 theelepel suiker toe. Leg de schilletjes er bovenop zodat de asperges onder het water blijven. Breng aan de kook, laat 1 minuut koken, zet dan het vuur uit en laat de asperges afgedekt nagaren in het hete vocht ongeveer 7-10 minuten afhankelijk van de dikte van de asperges.

Voeg een dopje witte wijnazijn toe aan de pan met zachtjes kokend water. Breek de eieren in een kopje en leg ze voorzichtig in het water. Pocheer ze voor 2-3 minuten. De dooier moet nog zacht zijn. Haal ze er uit met een schuimspaan en laat uitlekken. Warm de Parmezaan fondue op.

Haal de asperges uit de pan en laat ze goed uitlekken op een theedoek. Verdeel de spinazie over 2 borden en leg hierop de asperges. Leg de plakjes proscuitto er omheen. Leg het gepocheerde ei op de asperges en lepel de Parmezaan fondue over het ei. Strooi de resterende geraspte Parmezaan eroverheen en leg de spinazieblaadjes ernaast.


Fish in Parmesan Crust with Courgette and Spinach Salad

A really light and satisfying dinner using only just a few basic ingredients.

Serves 2

Ingredients
60g finely grated Parmesan
2 plaice fillets of 150g each (or other white fish)
1 egg
1 red chilli
1 lemon
2 courgettes
75g baby spinach
3 tablespoons sunflower oil
2 tablespoons olive oil
4 tablespoons flour salt and pepper

Method

Finely chop the red chilli. Using a vegetable peeler, pull thin ribbons from the courgette, making sure to stop once you reach the seeds. Place the courgette ribbons in a bowl.

Place 4 tablespoons flour on to a plate and mix salt and pepper through. Crack an egg on another plate and beat to loosen. Plaice the grated Parmesan on a third plate.

Heat a frying pan over medium heat with 3 tablespoons sunflower oil. Dust the fish through the flour, then dip in the egg and finally in the Parmesan. Fry the fish on both sides until golden.

Dress the courgette with 2 tablespoons olive oil, lemon juice and chilli to taste, salt and pepper. Mix through the spinach. Divide the salad between 2 plates, lay the fish on the side and serve.

60g fijn geraspte Parmezaan
2 scholfilets a 150g per stuk (of een andere witvis)
1 ei
1 rode chilipeper
1 citroen
2 courgettes
75g jonge spinazie
3 eetlepels zonnebloemolie
2 eetlepels olijfolie
4 eetlepels bloem
zout en peper

Bereiding

Snijd de rode chilipeper fijn. Trek met een dunschiller lange slierten van de courgettes totdat je bij de zaadjes komt en doe ze in een kom.

Doe 4 eetlepels bloem op een bord en meng er wat zout en peper doorheen. Breek het ei in een ander bord en klop het los. Doe de geraspte Parmezaan op een derde bord.

Verwarm een koekenpan op medium vuur met 3 eetlepels zonnebloemolie. Haal de vis door de bloem, vervolgens door het ei en daarna door de Parmezaan. Bak de vis, aan elke kant goudbruin.

Maak de courgette aan met 2 eetlepels olijfolie, citroensap en chilipeper naar smaak, zout en peper. Meng de spinazie erdoorheen. Verdeel over 2 borden, leg de vis er naast en serveer.


Lamb Burgers with Crispy Carrot and Feta

A recipe for all those meat-lovers! We all love a good burger and this is a great twist on a lamb burger. Lamb is perfectly in season in spring and the protein everyone should be eating now.

Ingredients
400g minced lamb
4 brioche buns
1 large carrot
60g feta
50g sriracha
75g rocket
2 spring onions
2 teaspoons ground cumin
4 tablespoons olive oil
salt and pepper

Method
Preheat an oven to 200°C. Peel the carrot and using the vegetable peeler, cut into long ‘ribbons’. Finely slice the spring onions.

Season the minced lamb with the spring onions, ground cumin, sriracha, salt and pepper to taste and shape into 4 hamburgers. Place the carrot ribbons on an oven tray and mix with 3 tablespoons olive oil, salt and pepper. Roast until they are crispy, about 20-25 minutes.

Place the brioche buns in the oven for 5 minutes and slice in half.

Heat a grill pan over medium heat with 1 tablespoon olive oil and grill the hamburgers for 3-4 minutes on each side. Crumble the feta.

Spread the remaining sriracha over the buns and place on the rocket. Lay on a burger and sprinkle the crumbled feta over. Top with the crispy carrot and close with the remaining bun half.

400g lamsgehakt
4 briochebroodjes
1 grote winterpeen
60g feta
50g sriracha
75g rucola
2 lenteuien
2 theelepels komijnpoeder
4 eetlepels olijfolie
zout en peper

Bereiding
Verwarm de oven voor op 200C. Schil de wortel en trek slierten met de dunschiller. Snijd de lenteuien fijn.

Kruid de lamsgehakt met de gesneden lenteuien, komijn, sriracha, peper en zout naar maak en maak er 4 hamburgertjes van. Doe de wortelslierten in een ovenschaal met 3 eetlepels olijfolie, zout en peper en rooster ze “crispie” in de oven voor ongeveer 20-25 minuten.

Doe de broodjes voor 5 minuten in de oven en snijd ze daarna overlangs in tweeen.

Verwarm een grillpan op medium vuur met 1 eetlepel olijfolie en grill de hamburgers 3-4 minuten aan elke kant. Kruimel de feta.

Verdeel de resterende sriracha over de broodjes, leg de rucola er bovenop. Leg op de rucola de hamburger en kruimel de feta er overheen. Verdeel de wortelslierten over de feta en zet de andere helft van het briochebroodje er bovenop.


Cauliflower and Fennel Salad with Preserved Lemon Dressing

This is a fantastic spring salad which is filling enough to be a complete meal. It's also completely vegan.

Serves 2

Ingredients
2 fennel bulbs
1 small cauliflower
60g smoked almonds
1/4 preserved lemon
2 cloves garlic
2 teaspoons agave syrup of coconut sugar
1 container mustard cress
1 bunch watercress
5 tablespoons olive oil
salt and epper

Method
Preheat an oven to 220°C. Cut the cauliflower into large florets and the fennel, lengthways into 6 wedges. Finely slice the garlic.

Place the cut vegetables on a roasting tray and drizzle over 3 tablespoons olive oil. Season with salt and pepper and place in the oven for 20-25 minutes (keep an eye on the vegetables that they don’t get too dark).

Remove the flesh from the preserved lemon and finely chop the skin. Place the garlic, agave or coconut sugar and 2 tablespoons olive oil in a container. Add a splash of water and blend to a dressing with a stick blender.

Coarsely chop the almonds and remove the tough stalks from the watercress.

Remove the vegetables from the oven and gently transfer to a serving platter. Scatter the watercress over the vegetables and spoon over the dressing. Snip the mustard cress and sprinkle over the warm salad together with the smoked almonds.

2 venkel
1 klein bloemkooltje
60g gerookte amandelen
1/4 stuk ingemaakte citroen
2 teentjes knoflook
2 theelepels agave of kokossuiker
1 bakje tuinkers
1 bos waterkers
5 eetlepels olijfolie
zout en peper

Bereiding
Warm de oven voor op 220 C. Snijd de bloemkool in grove stukken en de venkel over de lengte in 6 parten. Snijd knoflookteentjes in plakjes.

Leg de gesneden groenten op een ovenplaat en sprenkel er 3 eetlepels olijfolie overheen. Bestrooi met zout en peper. Zet plaat in de oven voor 20-25 minuten (houd goed in de gaten of het niet te donker wordt).

Verwijder het vruchtvlees van de ingemaakte citroen en snijd ¼ van de citroen fijn. Doe de knoflook, citroen, agave of kokossuiker, 2 eetlepels olijfolie in een bakje. Verdun met wat water en maak er een dressing van met een staafmixer of in de blender.

Hak de amandelen grof. Haal de steeltjes van de waterkers.

Haal de groenten uit de oven en schep ze voorzichtig op een schaal. Verdeel wat waterkers over de groenten en lepel de dressing er overheen. Knip de tuinkers los en strooi deze samen met de amandelen over de warme salade en serveer.


Lemon Cupcakes with Buttercream Icing

This recipe for lemon cupcakes is one that we have adapted from Martha Stewart. It produces light, tender cupcakes with a fragrant lemony flavour. Makes about 24 cupcakes.

Ingredients
3 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
220g unsalted butter, at room temperature
2 cups caster sugar
4 large eggs
finely grated zest of 2 lemons and 2 tablespoons lemon juice
1 teaspoon vanilla extract
1/2 cup natural yoghurt
1/2 cup milk

Buttercream Icing
150g butter, softened
300g icing sugar
1-2 tablespoons milk
¼ teaspoon vanilla extract

Chopped chocolate or other decorations to garnish. Our favourite is to use different flavours from Tony's Chocolonely.

Method

Preheat an oven to 160C. Line a muffin or cupcake tin with paper cases. Mix together the flour, baking powder and salt.

Using an electric mixer, cream the butter and sugar together until pale and fluffy. Add the eggs, one at a time, beating until each is incorporated. Beat in the lemon zest and vanilla. Add the flour mixture in batches, alternating with the yoghurt, milk and lemon juice. Beat until just combined.

Divide the batter evenly among the cupcake cases, filling them about 3/4 full. Bake for about 25 minutes, rotating the tins halfway until the cakes are golden brown and a skewer inserted into the centre comes out clean.

Transfer to wire racks and cool completely before icing. The cupcakes can be stored in an airtight container of frozen.

For the buttercream, beat the butter in a large bowl until soft. Add half of the icing sugar and beat until smooth.

Add the remaining icing sugar and one tablespoon of the milk and vanilla extract and beat the mixture until creamy and smooth. Beat in the remaining milk, if necessary, to loosen the mixture.

Spread the icing over the cupcakes using a knife or small palette knife. Top with the chopped chocolate or other decorations of your choice.

 


Easy Rhubarb Crumble

Rhubarb is in season right now and this is probably the easiest rhubarb crumble using ingredients probably everyone has in their store cupboard at home.

Serves 2

Ingredients
3 stalks rhubarb
10g butter, for greasing the ramekins
50g castor sugar (or extra to taste)

crumble topping
50g crunchy muesli

Method
Preheat the oven to 180 °C.

Cut the rhubarb into small pieces.

Transfer the rhubarb to a small pan and add 3 tablespoons sugar (or extra to taste) and cook until the rhubarb is tender, about 4 minutes.

Spoon the rhubarb into ramekins or ovenproof dishes and sprinkle generously with the muesli.

Place in the oven for 10 minutes until the crumble is heated through and lightly toasted.

Serve warm or cold with cream or ice cream.


Grilled White Asparagus with Smoked Salmon and Tarragon Sauce

It's a week until Easter and you're still probably wondering what to make? We always think of asparagus, but because of the extended cold snap this year, we'll have to be patient a little longer. Hopefully you'll be able to get your hands on some white gold, the first of the season's Dutch white asparagus just in time.

Serves 4

 

Ingredients
24 white asparagus
400g sliced smoked salmon
1 bunch tarragon
250 ml tub cream
2 shallots
200 g butter
200 ml white wine
6 tablespoons olive oil
salt and freshly ground black pepper

Method
1
Peel the white asparagus and cut off a 1 cm piece from the tough stalk end. Finely chop the shallots. Place the asparagus in a pan with cold water and salt, place the asparagus peelings on top and bring to the boil. Boil for 1 minute, turn off the heat and allow the asparagus to stand in the hot water for about 2 minutes.

Heat a pan with 3 tablespoons olive oil over medium heat and sweat the shallots for 5 minutes. Add 200 ml white wine and simmer until reduced by three-quarters. Add the tub of cream and simmer until reduced by half.

Remove the asparagus from the water and discard the peelings. Dry the asparagus on a clean tea towel. Drizzle over 3 tablespoons olive oil and season with salt and pepper. Heat a grill pan over medium heat and grill the asparagus until golden brown.

Strain the sauce to remove the shallot and return to the pan over a low heat. Cut the butter into pieces and whisk into the sauce. Pick the tarragon leaves off the stalks and chop finely.

Divide the grilled asparagus between 4 plates and lay the smoked salmon on top. Stir the tarragon through the sauce and spoon over the asparagus.
