Fresh/ green almonds

Here are the preparation ideas for fresh/green almonds:

  • Raw with sea salt and lemon – If they are still very young and tender, wash them, cut them in half if desired, and eat them with a little coarse sea salt and a squeeze of lemon. In Mediterranean countries, young green almonds are often eaten this way.
  • Lightly sautéed in olive oil – Remove the soft white almond from the fruit. Sauté it for a few minutes in olive oil with sea salt. You can also add garlic, thyme, or rosemary.
  • Roasted in the oven – Remove the kernels, toss them with a little olive oil and salt, and roast briefly until they become slightly firmer and lightly coloured. Fresh almonds contain more moisture than dried almonds, so they will remain somewhat softer.
  • Green almond pesto – Blend the fresh kernels with basil, garlic, Parmesan cheese, olive oil, and a little lemon juice. They make a milder, fresher pesto than dried almonds.
  • Fresh almond salad – Slice the young kernels and combine them with ingredients such as tomatoes, cucumber, feta or goat’s cheese, mint, lemon, and olive oil.
  • Pickled in brine – This works particularly well when the whole fruit is still young and fairly tender. Place the almonds in a salt-water brine with, for example, lemon peel, garlic, bay leaves, and herbs, and leave them to pickle. The result is somewhat similar to olives or other pickled vegetables.
  • With honey and yoghurt – Roughly chop the fresh white kernels and serve them with thick yoghurt and honey. A little lemon or orange zest is also delicious.
  • Fresh almond milk – Remove the kernels from their shells, blend them with cold water, and strain the mixture. Fresh almonds produce a particularly mild and creamy flavour.

Pizza Bianca with Zucchini Ribbons, Artichokes, Provolone & Pecorino

Pizza Bianca with Zucchini Ribbons, Artichokes, Mozzarella, Provolone & Pecorino

Serves: 2 pizzas

Ingredients

For the dough

  • 500 g "00" pizza flour
  • 325 ml lukewarm water
  • 10 g salt
  • 3 g active dry yeast (or 8 g fresh yeast)
  • 1 tbsp extra virgin olive oil

For the toppings

  • 2 balls fresh mozzarella, well drained and torn into pieces
  • 100 g provolone, thinly sliced or grated
  • 1 small zucchini, shaved into long ribbons with a vegetable peeler
  • 4–6 marinated artichoke hearts, halved or quartered
  • 2 tbsp capers, rinsed and drained
  • 2 tbsp pine nuts, lightly toasted
  • A generous handful of fresh arugula
  • 40 g freshly grated Pecorino Romano
  • Extra virgin olive oil
  • Freshly ground black pepper
  • Flaky sea salt

Instructions

  1. In a large bowl, combine the flour, yeast, and water. Add the salt and olive oil, then knead for 10–15 minutes until the dough is smooth and elastic. Cover and let it rise for 1½–2 hours, or until doubled in size.
  2. Preheat your oven, preferably with a pizza stone or pizza steel, to its highest temperature (250–300°C / 480–570°F).
  3. Divide the dough into two equal portions and stretch each into a thin pizza base.
  4. Top each pizza with the mozzarella and provolone.
  5. Bake for 7–10 minutes, or until the crust is golden and crisp and the cheese is bubbling.
  6. While the pizza is baking, lightly toast the pine nuts in a dry skillet until golden.
  7. As soon as the pizza comes out of the oven, top it with the fresh zucchini ribbons and marinated artichokes. Scatter over the capers, toasted pine nuts, and fresh arugula.
  8. Finish with a generous grating of Pecorino Romano, a drizzle of extra virgin olive oil, a pinch of flaky sea salt, and plenty of freshly ground black pepper.

Serving Suggestion

Serve immediately while the pizza is still warm. The warm, melted cheeses combined with the fresh zucchini ribbons, marinated artichokes, peppery arugula, salty capers, and toasted pine nuts create a light, vibrant pizza that is perfect for a beautiful summer day.

 

 Pizza Bianca met courgette, artisjok, provolone, mozzarella & pecorino

Ingrediënten (2 pizza's)

Voor het deeg

  • 500 g pizzabloem (tipo 00)
  • 325 ml lauwwarm water
  • 10 g zout
  • 3 g gedroogde gist (of 8 g verse gist)
  • 1 el extra vergine olijfolie

Voor de topping

  • 2 bollen mozzarella, goed uitgelekt en in stukjes gescheurd
  • 100 g provolone, in dunne plakjes of grof geraspt
  • 1 kleine courgette, met een dunschiller in lange linten gesneden
  • 4–6 artisjokharten, gehalveerd
  • 2 el kappertjes, afgespoeld
  • 2 el pijnboompitten
  • Een handje rucola
  • 40 g vers geraspte Pecorino
  • Extra vergine olijfolie
  • Versgemalen zwarte peper
  • Zeezout naar smaak

Bereiding

  1. Meng de bloem, gist en het water. Voeg daarna het zout en de olijfolie toe en kneed het deeg 10–15 minuten tot het glad en elastisch is. Laat het 1½ tot 2 uur rijzen, of tot het in volume is verdubbeld.
  2. Verwarm de oven (liefst met pizzasteen of pizzastaal) zo heet mogelijk, bij voorkeur 250–300 °C.
  3. Verdeel het deeg in twee bollen en rol of rek ze uit tot mooie dunne pizza's.
  4. Verdeel eerst de mozzarella en provolone over het deeg. Leg vervolgens de courgettelinten, artisjokharten en kappertjes erop. Besprenkel met een klein beetje olijfolie.
  5. Bak de pizza 7–10 minuten (afhankelijk van je oven), totdat de bodem goudbruin en krokant is en de kaas prachtig is gesmolten.
  6. Rooster ondertussen de pijnboompitten kort goudbruin in een droge koekenpan.
  7. Haal de pizza uit de oven en werk af met de geroosterde pijnboompitten, een royale hand rucola, vers geraspte Pecorino, een scheutje extra vergine olijfolie en wat zwarte peper.

Serveertip

Serveer direct met een goed glas gekoelde Pinot Grigio of een frisse Sauvignon Blanc. Deze pizza is licht, romig en fris tegelijk – precies wat je wilt op een warme zomerdag.

Wild garlic butter

Wild Garlic Butter

Ingredients

  • 100 g butter, softened

  • 1 generous handful wild garlic, finely chopped

  • zest of ½ lemon

  • pinch of salt

  • optional: black pepper

Method

  1. Mix the softened butter until smooth.

  2. Stir in the wild garlic and lemon zest.

  3. Season with salt and pepper.

  4. Shape into a log using cling film or greaseproof paper.


Blood orange marmalade

Blood Orange Marmalade (makes about 4 jars)

Ingredients

  • 1 kg blood oranges (preferably organic)

  • 1 lemon (organic)

  • 1 litre water

  • 800 g granulated sugar
    (You can use 1:1 jam sugar, but this will be slightly sweeter)


Preparation

  1. Wash the oranges and lemon thoroughly.

  2. Cut the oranges in half, squeeze out the juice and reserve the seeds and membranes (they contain natural pectin).

  3. Slice the peel into thin strips (julienne).

  4. Tie the seeds and membranes in a piece of muslin or place them in a tea infuser.


Cooking

  1. Put the juice, peel, lemon juice, water and the bag of seeds/membranes into a large pan.

  2. Bring to the boil, then simmer gently

  3. Add the sugar and stir until fully dissolved.

  4. Add the peel
  5. Bring to a rolling boil and cook till you reach a temperature of 105 C

  6. Test for setting: place a small spoonful on a cold plate. If it wrinkles when pushed, it’s ready.


Jarring

  1. Pour the hot marmalade into sterilised jars.

  2. Seal immediately and turn upside down for 5 minutes.

  3. Allow to cool completely and store in a cool, dark place.


Variations

Vanilla: add a split vanilla pod during cooking

Rosemary: infuse briefly, then remove

Cointreau or Grand Marnier: add a splash at the end

Chilli: just a pinch for gentle heat

Cardamon: a few

Bloedsinaasappel-marmelade (ca. 4 potjes)

Ingrediënten

  • 1 kg bloedsinaasappels (bij voorkeur biologisch)

  • 1 citroen (biologisch)

  • 1 liter water

  • 800 g geleisuiker (1:1 kan ook, maar dit geeft iets zoetere marmelade)


Voorbereiding

  1. Was de sinaasappels en citroen grondig.

  2. Snijd de sinaasappels doormidden, pers het sap eruit en bewaar pitten en vliesjes (die bevatten pectine), snijd wat van het wit uit de schil

  3. Snijd de schillen in dunne reepjes (julienne).

  4. Doe pitten en vliesjes in een stukje kaasdoek


Koken

  1. Doe sap, schillen, citroensap, water en het zakje met pitten/vliesjes in een grote pan.

  2. Breng aan de kook en kook voor 20 minuten

  3. Voeg de suiker toe en roer tot deze is opgelost, voeg daarna de gesneden sinaasappelschil toe

  4. Breng stevig aan de kook en laat doorkoken totdat jam een temperatuur van 105 C bereikt heeft

  5. Doe een geleitest (druppel op koud schoteltje): rimpelt het bij duwen, dan is het goed.


Inpotten

  1. Giet de hete marmelade in gesteriliseerde potten.

  2. Sluit direct af en zet 5 minuten op de kop.

  3. Laat afkoelen en bewaar koel en donker.


Variaties (erg lekker)

 vanille: kook een opengesneden vanillestokje mee

 rozemarijn: kort laten meekoken en weer verwijderen

 Cointreau of Grand Marnier: scheutje na het koken

Chili: miniem snufje voor pit

Kardamon: enkele peultjes
