French sausages with white bean puree and mushrooms

Ingredients
4 parsley/garlic sausages
1 small container of mixed mushrooms (300 g)
2 cans of white butter beans (2 x 400 g cans)
1 bag of parsley (30 gr)
2 garlic cloves

Preparation

Clean the mushrooms with a brush or a piece of kitchen paper. Cut or tear the large mushrooms in half.

Finely chop the parsley and garlic. Heat a skillet over medium heat with 2 tablespoons of olive oil. Add the sausages and fry until golden brown.

Drain the liquid from the beans into a sieve and rinse the beans under cold water. Puree them together with ½ of the sliced garlic cloves and 2 tablespoons of olive oil in a bowl (with the hand blender). Season with salt and pepper and heat gently on the stove in a small saucepan. If the bean puree is a bit thick, mix in a splash of water.

Remove the sausages from the pan and keep warm under a piece of aluminum foil.
Heat the frying pan over high heat and fry the mushrooms with the remaining garlic in the fat of the sausages for about 3 to 4 minutes. Season with salt and pepper, deglaze with a splash of white wine and mix in the chopped parsley.

Divide the bean puree between 2 plates. Slice the sausages and place them on top of the bean puree. Spoon the mushrooms on top.

 

Franse worstjes met witte bonenpuree en paddenstoelen

Ingrediënten

4 peterselie/ knoflookworstjes

1 bakje gemengde paddenstoelen (300 gram)

2 blikjes witte boterbonen (2 x 400 gr blikken)

1 zakje peterselie (30 gr)

2 knoflookteentjes

 

Bereiding

Maak de paddenstoelen schoon met een borsteltje of een stukje keukenpapier. Snijd of scheur de grote paddenstoelen in tweeen..

Hak de peterselie en knoflook fijn. Verhit een koekenpan op medium vuur met 2 eetlepels olijfolie. Voeg de worstjes toe en bak ze goudbruin.

Giet het vocht van de bonen af in een zeef en spoel de bonen af onder koud water. Pureer ze samen met ½ van de  gesneden knoflookteentjes en 2 eetlepels olijfolie in een kom (met de staafmixer). Breng op smaak met zout en peper en verwarm het voorzichtig op het vuur in een klein pannetje. Mocht de bonenpuree wat dik zijn meng er dan een scheutje water doorheen.

Haal de worstjes uit de pan en houd ze warm onder een stukje aluminiumfolie.

Verwarm de koekenpan op hoog vuur en bak de paddenstoelen met de resterende knoflook in het vet van de worstjes ongeveer  3 tot 4 minuten. Breng op smaak met zout en peper, blus af met een scheutje witte wijn en meng de gehakte peterselie er doorheen.

Verdeel de bonenpuree over 2 borden. Snijd de worstjes en leg ze boven op de bonenpuree. Schep de paddenstoelen eroverheen.

 

 

 

 

 

 

 

 

 

 

 

 

 


Pita with lamb meatballs

 Ingredients

350 gr lamb meatballs

1 teaspoon ground cumin

200 ml Greek yoghurt
4 pita breads

1 bag lamb’s lettuce

3 tomatoes

1 cucumber

2 tablespoons tahini

Method

Slice the tomatoes. Peel the cucumber, halve lengthways, remove the seeds and slice thinly. Set the cut vegetables aside.

Season the Greek yoghurt with ground cumin to taste, salt, pepper and 1 tablespoon olive oil.

Heat a frying pan over medium heat with 2 tablespoons olive oil and fry the lamb meatballs for about 10 minutes until golden brown.

Grill the tomato slices in a grill pan with 1 tablespoon olive over medium heat and season with salt and pepper. Heat the pita breads up in a toaster or preheated oven at 180° C.

Dress the lamb’s lettuce with 1-2 tablespoons olive oil, salt and pepper. Cut the pita breads open and spread with a layer of yoghurt. Fill the pitas with the cucumber, tomatoes, lettuce, lamb meatballs and remaining yoghurt. Spoon the tahini over the vegetables. Mix together the remaining salad and cucumber and serve on the side.

1 bakje Griekse yoghurt (180 gr)
4 pitabroodjes

1 zakje veldsla (75 gr)

3 tomaten

1 komkommer

Bereiding

Snijd de tomaten in plakken. Snijd de komkommer over de lengte in tweeen, haal de zaadjes eruit en snijd in dunne plakjes. Zet de gesneden groenten opzij.

Breng de Griekse yoghurt op smaak met komijnpoeder, zout, peper en 1 eetlepel olijfolie.

Verwarm een koekenpan op medium vuur met 2 eetlepels olijfolie en bak de lamsgehaktballetjes in ongeveer 10 minuten goudbruin.

Grill de tomatenschijfjes in de pan met 1 eetlepel olijfolie en bestrooi met zout en peper. Verwarm de pitabroodjes in een broodrooster of in een voorverwarmde oven van 180° C.

Maak veldsla aan met 1-2 eetlepels olijfolie, zout en peper. Snijd de pitabroodjes open en bestrijk ze met de Griekse yoghurt. Vul de pitabroodjes met de komkommer, tomaten en veldsla, de lamsgehaktballetjes en de resterende Griekse yoghurt.Lepel er wat tahini overheen. Meng restant van de sla en komkommer door elkaar en serveer het in een schaaltje erbij.

 

 

 


Boeuf Bourguignon

After many years of searching and testing, we came to the conclusion that the legendary Julia Child had the definitive recipe. And we're not the only ones. Thomas Kellar, the brilliant Chef-Patron of the French Laundry in Napa Valley, California, also says that it's his go-to recipe for Boeuf Bourguignon. The best pan to use for a Boeuf Bourguignon is a Le Creuset cast iron as it spreads the heat quickly and evenly.

Serves 6

Ingredients and Method

180g piece of streaky bacon

Remove the rind and cut the bacon into lardons. Simmer the rind and bacon in 750ml water for 10 minutes. Drain and dry.

Preheat the oven to 220°C.

A large oven-proof pan
1 Tablespoon olive or sunflower oil
A slotted spoon

Sauté the bacon in the oil over moderate heat for 2-3 minutes to brown lightly. Remove to a side dish with a slotted spoon. Leave the oven-proof pan on the heat until the fat is almost smoking to sauté the beef.

1,5kg lean stewing steak, cut into 5cm cubes

Dry the beef; it will not brown if it is damp. Sauté it, a few pieces at a time, in the hot oil and bacon fat until nicely browned on all sides. Add it to the bacon.

1 sliced carrot
1 sliced onion

In the same fat, brown the sliced vegetables. Pour out the sautéing fat.

1 tsp salt
30g flour
¼ tsp pepper

Return the beef and bacon to the casserole and toss with the salt and pepper. Then sprinkle in the flour and toss again to coat the beef lightly with the flour. Place the casserole in the middle position of preheated oven for 4 minutes. Toss the meat and return to oven for 4 minutes more. (This browns the flour and covers the meat with a light crust.) Remove casserole and turn oven down to 160°C.

750ml full-bodied young red wine or a Chianti
500-600ml brown beef stock
1 Tbl tomato paste
2 cloves mashed garlic
½ tsp thyme
1 crumbled bay leaf
the blanched bacon rind

Stir in the wine and enough stock so that the meat is barely covered. Add the tomato paste, garlic, herbs and bacon rind. Bring to simmering point on top of stove. Then cover the casserole and place in the lower part of preheated oven. Regulate heat so that liquid simmers very slowly for 3-4 hours. The meat is done when a fork pierces it easily.

18-24 small onions, brown braised in stock
500g quartered fresh mushrooms, sautéed in butter

While the beef is cooking, prepare the onions and mushrooms. Leave them aside until needed.

When the meat is tender, pour the contents of the casserole into a sieve over a saucepan. Wash out the casserole and return the beef and bacon to it. Distribute the cooked onions and mushrooms over the meat.

Skim fat off the sauce. Simmer the sauce for a minute or two, skimming off additional fat as it rises. You should have about 600ml sauce thick enough to coat a spoon lightly. If too thin, boil down rapidly. If too thick, mix in a few tablespoons of stock. Taste carefully for seasoning. Pour the sauce over the meat and vegetables.

FOR IMMEDIATE SERVING

Cover the casserole and simmer for 2-3 minutes, basting the meat and vegetables with the sauce several times. Serve in its casserole, or arrange the stew on a dish surrounded with boiled potatoes, noodles or rice, and decorated with parsley.

FOR SERVING LATER

When cold, cover and refrigerate. About 15-20 minutes before serving, bring to simmering point, cover and simmer very slowly for 10 minutes, occasionally basting the meat and vegetables with the sauce.

Split Pea ‘Stamppot’, Smoked Sausage, Caraway Butter & Crispy Onion

To honour our Dutch heritage, we have come up with a novel way of making a 'stamppot' but using yellow split peas instead of potatoes. It's delicious, healthy and oh so satisfying.

Serves 2

Ingredients
1 smoked sausage of your choice
250g yellow split peas
1 onion
1 carrot
1 leek
1 small bunch coriander
pinch of nutmeg
50g butter
1 teaspoon caraway seeds
30g crispy onions
2 tablespoons olive oil
salt and pepper

Method
Bring a pan of water to the boil fort he smoked sausage. Finely chop the onion, carrot and leek. Heat a pan over medium heat with 2 tablespoons olive oil and sweat the vegetables for 5 minutes.

Add the split peas and nutmeg to taste to the pan. Add enough water to cover the split peas. Bring to the boil and simmer gently for about 35 minutes or until the peas are soft. Keep checking if there is enough liquid in the pan. If it gets too dry, add extra water as necessary.

Place the smoked sausage in the pan hot water and heat over a low heat for about 20 minutes (the water shouldn’t boil).

Melt the butter in a frying pan with the caraway seeds until the butter foams. Finely chop the coriander.

Season the split pea puree with salt and pepper and stir through the coriander. Finely slice the smoked sausage. Divide the ‘stamppot’ between 2 plates and top with the smoked sausage slices. Spoon over the caraway butter and sprinkle over the crispy onions.

1 rookworst naar keus
250gr gele spliterwten
1 ui
1 wortel
1 prei
1 bosje verse koriander
snufje nootmuskaat
50gr boter
1 theelepel karwijzaad
30gr “crispy” uien
2 eetlepels olijfolie
zout en peper

Bereiding
Breng een pan water aan de kook voor de rookworst. Snijd de ui, wortel en prei fijn. Verwarm een pan op medium vuur met 2 eetlepels olijfolie en smoor de groenten 5 minuten.

Voeg de spliterwten en nootmuskaat naar smaak toe aan de pan. Voeg water toe aan de erwten totdat ze onderstaan. Breng aan de kook en laat zachtjes sudderen voor ongeveer 35 minuten totdat erwten zacht zijn. Kijk steeds of er genoeg vocht aanwezig is in de pan, voeg indien nodig water toe.

Doe de rookworst in de pan met warm water en verwarm op een laag vuurtje (water mag niet koken).

Smelt de boter in een koekenpan met het karwijzaad en laat de boter borrelen. Snijd de koriander fijn.

Breng de erwtenpuree op smaak met zout en peper en roer de koriander er doorheen. Snijd de rookworst, schuin, in plakjes. Verdeel het stamppotje over 2 borden en leg de plakjes rookworst er bovenop. Lepel de karwijboter over de linzen en strooi de ‘crispy’ uien er overheen.


Bratwurst Hotdog with Sauerkraut

Weekend food should be one of two things - either a dish which you can take your time over or something fun which gives in to your cravings. Here's our take on a hotdog made with bratwurst or boudin blanc and paired with sauerkraut. Try your local butcher to get good quality sausages.

Serves 2

Ingredients
4 bratwurst or boudin blanc sausages
250g sauerkraut
100g lardons
1 onion
1 apple
30g butter
2 hotdog rolls of your choice
4 tablespoons olive oil
1 glass white wine
2 tablespoon tomato ketchup
1 tablespoon mustard
salt and pepper

Method
Finely slice the onion. Peel the apple, discard the core and cut into 1 cm cubes. Place the sauerkraut in a sieve and rinse under cold running water.

Heat a pot over medium heat. Add 2 tablespoons olive oil and 2 cubes butter with the onion and lardons. Fry for 5 minutes. Add the sauerkraut, apple and a glass of white wine and cook gently over a low heat, covered with a lid, for about 20 minutes.

Heat a grill pan over medium heat. Add 2 tablespoons olive oil to the pan and grill the sausages for about 12 minutes until golden brown and cooked through. Slice the crispy rolls lengthways in half. Toast them, cut side down, in the grill pan.

Season the sauerkraut with salt and pepper. Top the open roll halves with the sauerkraut and lay a sausage on each one. Serve with ketchup and mustard.

4 Berliner braadworstjes or boudin blanc
250gr zuurkool
100gr lardons
1 ui
1 appel
30gr cupjes boter
2 hotdog broodjes, naar keus
4 eetlepels olijfolie
1 glas witte wijn
2 eetlepels tomaten ketchup
1 eetlepel mosterd
zout en peper

Bereiding
Snijd de ui in dunne ringen. Schil de appel, verwijder het klokhuis en snijd in kleine blokjes van 1 cm. Doe de zuurkool in een zeef en spoel af onder koud stromend water.

Verwarm een pan op medium vuur. Voeg 2 eetlepels olijfolie en 2 cupjes boter toe samen met de ui en lardons. Bak ze 5 minuten. Voeg de zuurkool en appel toe. Voeg een glas witte wijn toe en kook zachtjes, afgedekt, op een laag vuurtje voor ongeveer 20 minuten.

Verwarm een grillpan op medium vuur. Voeg 2 eetlepels olijfolie toe aan de pan en grill de worstjes in ongeveer 12 minuten gaar en goudbruin. Snijd de pistolets of hotdog broodjes over de lengte in tweeën. Rooster de broodjes op de gesneden kant in de grillpan.

Breng de zuurkool op smaak met zout en peper. Leg op beide helften van broodje wat zuurkool en daar bovenop een worstje. Serveer met ketchup en mosterd.


One Pan Chicken with Pumpkin and Walnuts

The beauty about one pan dishes is that there's very little washing up to do. You spend a little time preparing the ingredients, place it in a roasting pan and let the oven do the work. These are the flavours of autumn in one dish.

Serves 4

Ingredients
4 chicken thighs and 4 drumsticks
3 red onions
1kg butternut squash
1 small bunch of sage
100g walnuts
750g floury potatoes
sprinkle of nutmeg
4 tablespoons olive oil
splash of milk
50g butter
2 tablespoons sherry vinegar
salt and pepper

Method
Preheat an oven to 200˚C. Peel the red onions and butternut. Cut the onions into wedges and the pumpkin into chunks.

Place the chicken, pumpkin and onions in a roasting dish with 3 tablespoons olive oil, salt and pepper. Mix all the ingredients together and place in the oven for about 20 minutes.

Peel the potatoes and cut into pieces. Place them in a pan with cold water and salt. Bring to the boil and simmer gently for about 15 minutes until the potatoes are cooked. Drain off the water and mash the potatoes with a potato masher. Add 50 g butter and a splash of milk, stirring until smooth and creamy. Season with salt, pepper and nutmeg. Set aside.

Add the sage leaves, walnuts and 2 tablespoons sherry vinegar to the chicken and mix the ingredients together. Return to the oven for a further 25 minutes.

Reheat the mashed potato and divide between 4 plates. Lay a chicken thigh and drumstick on each plate. Spoon the onion, pumpkin and pan juices of the chicken and serve.

3 rode uien
1kg flespompoen
1 klein bosje salie
100gr walnoten
750gr kruimige aardappelen
snufje nootmuskaat
4 eetlepels olijfolie
scheutje melk
50gr boter
2 eetlepels sherry azijn
zout en peper

Bereiding
Verwarm een oven voor op 200˚C. Schil de rode ui en flespompoen. Snijd de uien in partjes en de pompoen in grove stukken.

Doe de kip, uien en pompoen in een ovenschaal met 3 eetlepels olijfolie, zout en peper. Meng alles goed door elkaar en zet ongeveer 20 minuten in de oven.

Schil de aardappelen en snijd in stukjes. Doe ze in een pan met koud water en zout. Breng aan de kook en kook zachtjes voor ongeveer 15 minuten. Giet het water van de aardappelen af en stamp ze fijn met een aardappelstamper. Voeg 50 gr boter en een scheutje melk toe en maak er een smeuïge puree van. Breng op smaak met nootmuskaat, zout en peper en zet opzij.

Voeg de salieblaadjes, walnoten en 2 eetlepels sherryazijn toe aan de kip en meng nog eens door elkaar. Zet terug in de oven voor nog eens 20  minuten.

Verwarm de aardappelpuree. Verdeel de puree over 4 borden. Leg een kippendij en pootje op elk bord. Lepel de uien, pompoen en sappen over de kip en serveer.


Spicy Sausage Stew

A steaming hot pan of this sausage stew set in the middle of the table is the perfect excuse we need for spending a cold evening at home.

Serves 4

Ingredients
1 onion
2 cloves garlic
1 stick celery
1 yellow pepper
1 red pepper
4 spicy sausages of 120-150g each
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
a sprinkle of chilli flakes
2 tins tomato cubes
2 tins cannellini beans
125g baby spinach
25g panko
4 tablespoons olive oil
salt and pepper

Method
Finely chop the onion, garlic and celery. Remove the seeds from the pepper and cut into strips. Drain the liquid off from cannellini beans.

Heat a cast-iron pan over medium-high heat with 3 tablespoons olive oil and fry the sausages until golden brown. Remove from the pan and add the onion and celery. Fry for 5 minutes, then add the rest of cut vegetables and fry for a further 5 minutes.

Add the spices to the pan and fry for 1 minute. Then add the tomatoes, salt and pepper and bring to the boil. Lower the heat to a simmer and cook gently, covered with a lid, for about 10 minutes. Add the sausages and cook for a further 10 minutes. Lastly, add the beans and cook for 5 minutes more.

Heat the grill in an oven. Add the spinach to the pan and mix gently together. Sprinkle over the panko and drizzle over 1 tablespoon olive oil. Place under the grill for 2-3 minutes.

Serve the dish straight from the pan.

1 theelepel gerookte paprikapoeder
½ theelepel komijnpoeder
snufje chilivlokken
2 blikken tomaatblokjes
2 blikken canellinibonen
125gr baby spinazie
25gr panko
4 eetlepels olijfolie
zout en peper

Bereiding
Snijd ui, knoflook en bleekselderij fijn. Verwijder de zaadjes van de paprika’s en snijd in reepjes. Giet het vocht van de bonen af.

Verwarm een gietijzer pan op medium-hoog vuur met 3 eetlepels olijfolie en bak de worstjes rondom goudbruin. Haal ze uit de pan en voeg de ui en selderij toe. Bak 5 minuten, voeg de rest van de gesneden groenten toe en stoof nog 5 minuten.

Voeg de specerijen toe aan de pan en bak 1 minuut. Voeg de tomaten, zout en peper toe en breng aan de kook. Kook zachtjes afgedekt voor ongeveer 10 minuten, voeg de worstjes toe en kook 10 minuten. Voeg de bonen toe en kook nogmaals zachtjes 5 minuten.

Verwarm de grill in de oven. Voeg de spinazie toe en meng voorzichtig door elkaar. Bestrooi met de panko en druppel 1 eetlepel olijfolie eroverheen. Zet 2-3 minuten onder de grill.

Serveer het gerecht direct uit de pan.


Smoked Bacon and Tomato Spaghetti

Imagine a recipe for a quick dinner to get on the table during a busy week with ingredients that you most probably already have and one that's going to please the whole family? Well, here it is.....

Serves 4

Ingredients
400g pack spaghetti
175g smoked bacon
1 onion
2 cloves garlic
2 teaspoons smoked paprika
2 tins tomato cubes
75g grated Parmesan
75g rocket
4 tablespoons olive oil
salt and pepper

Method
Finely chop the onion and garlic. Cut the bacon into small strips. Bring a pan of salted water to the boil.

Heat a frying pan over medium heat with 2 tablespoons olive oil and fry the bacon for 2-3 minutes. Add the onion and fry for a further 4 minutes.

Add the garlic and smoked paprika and fry for 1 minute. Add the tomatoes, salt and pepper and simmer gently for 10 minutes until the sauce has reduced by a third.

Add the spaghetti to the pan of boiling water and cook for 8-10 minutes until al dente. Reserve a cup of the cooking water and drain the spaghetti.

Dress the rocket with a little olive oil and salt. Mix the spaghetti through the tomato sauce and if necessary, thin the sauce down with some of the reserved pasta water. Divide the spaghetti between 4 plates, sprinkle over the grated Parmesan and top with the rocket.

2 teentjes knoflook
2 theelepels gerookte paprikapoeder
2 blikken tomaatblokjes
75gr geraspte Parmezaan
75gr rucola
4 eetlepels olijfolie
zout en peper

Bereiding
Snijd de ui en knoflook fijn. Snijd het ontbijtspek in kleine reepjes. Breng een pan water met zout aan de kook.

Verwarm een koekenpan op medium vuur met 2 eetlepels olijfolie en bak het ontbijtspek 2-3 minuten. Voeg de ui toe en bak nog eens 4 minuten.

Voeg de knoflook en gerookte paprikapoeder toe en bak 1 minuut. Voeg de tomaten, zout en peper toe en kook zachtjes 10 minuten. Kook 1/3  van de saus in.

Voeg de spaghetti toe aan de pan met kokend water en kook in 8-10 minuten beetgaar. Bewaar een kopje van het kookvocht en giet de spaghetti af.

Maak rucola aan met olijfolie naar smaak. Meng de spaghetti door de tomaten en verdun, indien nodig, met het bewaarde kookvocht. Verdeel de spaghetti over 4 borden, bestrooi met de geraspte Parmezaan en leg wat rucola bovenop.


Meatballs with Fennel and Ricotta

We know that we've been talking a lot recently about comfort food. The truth is really, that during the this strange time we're all experiencing and the lack of human contact, there's nothing better than plate of something delicious and comforting to lift us up and give us a big culinary hug.

Serves 2

Ingredients
8 veal meatballs of 50g each (bought from a butcher or self-made)
250g ricotta
2 onions
2 bulbs fennel
30g panko
1/2 chicken stock cube
30g grated Parmesan
35g pine nuts
600g floury potatoes
5 tablespoons olive oil
splash of milk
50g butter

Method
Preheat an oven to 200°C. Finely slice the onion and fennel. Reserve the green herby ends of the fennel.  Dissolve ½ the stock cube in 200 ml hot water. Peel the potatoes and cut into chunks. Place in a pan of salted water and bring to the boil. Simmer gently for about 15 minutes until soft. Drain off the water and mash the potatoes. Add 50 g butter and a splash of milk, stirring until smooth. Season with salt and pepper and keep warm over a low heat.

Heat a frying pan over medium heat with 3 tablespoons olive oil and sweat the onions for 10 minutes until golden brown. Add the fennel and fry for a further 5 minutes. Season with salt and pepper.

Add the stock and boil to reduce by half. Transfer to a roasting dish. Add 2 tablespoons olive oil to the frying pan and fry the meatballs until golden. Add to the roasting dish with the onions and fennel.

Spoon the ricotta around the meatballs and sprinkle over the grated Parmesan, panko and pine nuts. Place in the oven for 12-15 minutes until the top is lightly coloured.

Finely chop the reserved herby fennel. Reheat the mashed potatoes. Remove the meatballs from the oven and sprinkle over the chopped fennel. Serve with the mashed potatoes.

Ingrediënten
8 kalfsgehaktballetjes van 50gr per stuk (gekocht of zelfgemaakt)
250gr ricotta
2 uien
2 venkel
30gr panko
1/2 kippenbouillon blokje
30gr geraspte Parmezaan
25gr pijnboompitjes
600gr kruimige aardappels
5 eetlepels olijfolie
scheutje melk
50gr boter
zout en peper

Bereiding
Verwarm een oven voor op 200° C. Snijd de uien en venkel fijn. Bewaar het groen van de venkel. Los ½ van het bouillonblokje op in 200 ml warm water. Schil de aardappels en snijd ze in stukken. Breng ze in een pan met koud water en zout aan de kook. Kook ze zachtjes ongeveer 15 minuten totdat ze zacht zijn. Giet het water van de aardappelen af en stamp ze fijn. Voeg 50 gr boter en een scheutje melk toe. Breng op smaak met zout en peper en houd warm op een laag vuurtje.

Verwarm een koekenpan met 3 eetlepels olijfolie en smoor de uien in 10 minuten goudbruin. Voeg de venkel toe en bak nog eens 5 minuten, breng op smaak met zout en peper.

Voeg de bouillon toe en laat voor de helft inkoken. Doe ze in een ovenschaal. Voeg 2 eetlepels olijfolie toe in een koekenpan en bak de gehaktballetjes rondom goudbruin. Voeg ze toe aan de ovenschaal met de uien en venkel.

Lepel de ricotta eromheen en besprenkel met de geraspte Parmezaan, broodkruim en pijnboompitjes. Zet in de oven ongeveer 12-15 minuten, totdat de bovenkant licht gekleurd is

Hak het groen van de venkel fijn. Verwarm de aardappelpuree. Haal de gehaktballetjes uit de oven, bestrooi met het venkelgroen en serveer met de aardappelpuree.


Sausages with Pear-Potato Mash & Mustard

There's nothing more English than sausages and mash. It's the ultimate comfort food! Give it a Dutch twist by using good quality, locally reared pork sausages and local pears through the mash which work so well with pork.

Ingredients
2 good-quality pork sausages of your choice, about 150g each
1 small bunch tarragon
2 pears
350g shallots
600g floury potatoes
35g butter
1 tablespoon brown sugar
2 tablespoon olive oil
50-100 ml milk
1 teaspoon wholegrain mustard
2 tablespoons red wine- or balsamic vinegar
salt and pepper 

 Method

Peel the potatoes in cut into 2 cm cubes. Peel the pears and cut into slices. Finely slice the shallots into rings.

Place the potatoes and pears in pan with cold water and a good pinch of salt. Bring to the boil and cook for about 15 minutes until they are soft.

Heat a frying pan with 2 tablespoons olive oil over medium heat and fry the sausages gently until golden and cooked through, about 10-12 minutes. Remove the sausages from the pan and keep warm. Sweat the shallots in the same frying pan for about 4 minutes. Add the brown sugar and fry for 1 minute. Add 2 tablespoons red wine or balsamic vinegar and cook for 30 seconds. Return the sausages to the pan and keep warm over a low heat. Add a splash of water if the shallots are getting too dry.

Drain the water from the potatoes. Mash the potatoes and pears with 1 teaspoon grain mustard, butter and enough milk to make a creamy mash. Season with salt and pepper.

Finely chop the tarragon and stir through the shallots. Divide the potato-pear mash between 2 plates. Lay the sausages on the side and spoon over the shallots.

Ingrediënten
2 varkensworstjes van goede kwaliteit, ongeveer 150 gram per stuk
1 klein bosje dragon
2 peren
350gr sjalotjes
600gr kruimige aardappels
35gr boter
1 eetlepel bruine basterdsuiker
2 eetlepels olijfolie
50-100ml melk
1 theelepel grove mosterd
2 eetlepels rode wijnazijn of balsamicoazijn
zout en peper

Bereiding

Schil de aardappels en snijd ze in blokjes van 2 cm. Schil de peren en snijd ze in plakjes. Snijd de sjalotjes in dunne ringetjes.

Doe de aardappels in een pan met koud water, voeg wat zout toe en breng aan de kook. Kook ze in ongeveer 15 minuten gaar.

Verwarm een koekenpan met 2 eetlepels olijfolie op medium vuur en braad hier in de worstjes goudbruin voor ongeveer 10 minuten.

Haal de worstjes uit de pan en houd ze warm. Smoor de sjalotjes in de koekenpan voor 4 minuten. Voeg suiker toe en bak 1 minuut. Voeg daarna de azijn toe en kook 30 seconden. Voeg worstjes toe aan de pan en houd warm op een laag vuurtje. Voeg eventueel wat water toe.

Giet het water van de aardappels af. Maak van de aardappels, peren, mosterd, melk en boter een smeuïge puree. Breng op smaak met zout en peper.

Snijd de dragon fijn en meng dit door de sjalotjes. Verdeel de aardappel/perenstamppot over 2 borden, leg de worstjes ernaast en verdeel het sjalottenmengsel er overheen.
