Fresh/ green almonds
Here are the preparation ideas for fresh/green almonds:
- Raw with sea salt and lemon – If they are still very young and tender, wash them, cut them in half if desired, and eat them with a little coarse sea salt and a squeeze of lemon. In Mediterranean countries, young green almonds are often eaten this way.
- Lightly sautéed in olive oil – Remove the soft white almond from the fruit. Sauté it for a few minutes in olive oil with sea salt. You can also add garlic, thyme, or rosemary.
- Roasted in the oven – Remove the kernels, toss them with a little olive oil and salt, and roast briefly until they become slightly firmer and lightly coloured. Fresh almonds contain more moisture than dried almonds, so they will remain somewhat softer.
- Green almond pesto – Blend the fresh kernels with basil, garlic, Parmesan cheese, olive oil, and a little lemon juice. They make a milder, fresher pesto than dried almonds.
- Fresh almond salad – Slice the young kernels and combine them with ingredients such as tomatoes, cucumber, feta or goat’s cheese, mint, lemon, and olive oil.
- Pickled in brine – This works particularly well when the whole fruit is still young and fairly tender. Place the almonds in a salt-water brine with, for example, lemon peel, garlic, bay leaves, and herbs, and leave them to pickle. The result is somewhat similar to olives or other pickled vegetables.
- With honey and yoghurt – Roughly chop the fresh white kernels and serve them with thick yoghurt and honey. A little lemon or orange zest is also delicious.
- Fresh almond milk – Remove the kernels from their shells, blend them with cold water, and strain the mixture. Fresh almonds produce a particularly mild and creamy flavour.
Plum Jam
Homemade Plum Jam
Makes approximately 4 jars
Ingredients
- 1 kg ripe plums, pitted weight
- 500–600 g 2:1 jam sugar
- Juice of 1 lemon
- 1 tsp vanilla extract or ½ vanilla pod
- Optional: ½ tsp cinnamon
Method
Cut the plums into small pieces and place them in a bowl with the sugar and the lemon juice. Leave the plums in the fridge overnight. The next day put the prunes in a pan, simmer gently for about 10 minutes, until the fruit has softened.
To check if the jam is ready, spoon a small amount onto a cold plate. Leave it for a minute, then push it gently with your finger. If it wrinkles slightly and has started to set, it’s ready.
Pour the hot jam into clean, sterilised jars, seal immediately and leave to cool.
A little twist: Plum jam is delicious with aged cheese, Brie, goat’s cheese or pâté, making it perfect for meeting lunches. For something a little different, add star anise, fresh ginger or a small sprig of rosemary while cooking.
Pruimenjam
Voor ongeveer 4 potjes:
- 1 kg rijpe pruimen, ontpit gewicht
- 500–600 g geleisuiker 2:1
- sap van 1 citroen
- 1 tl vanille-extract óf ½ vanillestokje
- optioneel: ½ tl kaneel
Snijd de pruimen in stukjes en doe ze met de suiker en citroensap in een ruime kom en laat de pruimen een nacht in de ijskast staan. Doe het pruimenmengsel de volgende dag in een pan en laat ze ongeveer 10 minuten zachtjes koken, totdat ze mooi zacht worden.
Doe een klein lepeltje jam op een koud schoteltje. Wordt de jam na een minuut mooi dik en rimpelt hij wanneer je er met je vinger doorheen gaat? Dan is hij klaar.
Schep de hete jam in schone, gesteriliseerde potjes, sluit ze direct en laat afkoelen.
Lekker voor meeting lunches: pruim combineert heel goed met oude kaas, brie, geitenkaas en paté. Je kunt ook een accent geven met steranijs, verse gember of een klein takje rozemarijn tijdens het koken.
Pizza Bianca with Zucchini Ribbons, Artichokes, Provolone & Pecorino
Pizza Bianca with Zucchini Ribbons, Artichokes, Mozzarella, Provolone & Pecorino
Serves: 2 pizzas
Ingredients
For the dough
- 500 g "00" pizza flour
- 325 ml lukewarm water
- 10 g salt
- 3 g active dry yeast (or 8 g fresh yeast)
- 1 tbsp extra virgin olive oil
For the toppings
- 2 balls fresh mozzarella, well drained and torn into pieces
- 100 g provolone, thinly sliced or grated
- 1 small zucchini, shaved into long ribbons with a vegetable peeler
- 4–6 marinated artichoke hearts, halved or quartered
- 2 tbsp capers, rinsed and drained
- 2 tbsp pine nuts, lightly toasted
- A generous handful of fresh arugula
- 40 g freshly grated Pecorino Romano
- Extra virgin olive oil
- Freshly ground black pepper
- Flaky sea salt
Instructions
- In a large bowl, combine the flour, yeast, and water. Add the salt and olive oil, then knead for 10–15 minutes until the dough is smooth and elastic. Cover and let it rise for 1½–2 hours, or until doubled in size.
- Preheat your oven, preferably with a pizza stone or pizza steel, to its highest temperature (250–300°C / 480–570°F).
- Divide the dough into two equal portions and stretch each into a thin pizza base.
- Top each pizza with the mozzarella and provolone.
- Bake for 7–10 minutes, or until the crust is golden and crisp and the cheese is bubbling.
- While the pizza is baking, lightly toast the pine nuts in a dry skillet until golden.
- As soon as the pizza comes out of the oven, top it with the fresh zucchini ribbons and marinated artichokes. Scatter over the capers, toasted pine nuts, and fresh arugula.
- Finish with a generous grating of Pecorino Romano, a drizzle of extra virgin olive oil, a pinch of flaky sea salt, and plenty of freshly ground black pepper.
Serving Suggestion
Serve immediately while the pizza is still warm. The warm, melted cheeses combined with the fresh zucchini ribbons, marinated artichokes, peppery arugula, salty capers, and toasted pine nuts create a light, vibrant pizza that is perfect for a beautiful summer day.
Pizza Bianca met courgette, artisjok, provolone, mozzarella & pecorino
Ingrediënten (2 pizza's)
Voor het deeg
- 500 g pizzabloem (tipo 00)
- 325 ml lauwwarm water
- 10 g zout
- 3 g gedroogde gist (of 8 g verse gist)
- 1 el extra vergine olijfolie
Voor de topping
- 2 bollen mozzarella, goed uitgelekt en in stukjes gescheurd
- 100 g provolone, in dunne plakjes of grof geraspt
- 1 kleine courgette, met een dunschiller in lange linten gesneden
- 4–6 artisjokharten, gehalveerd
- 2 el kappertjes, afgespoeld
- 2 el pijnboompitten
- Een handje rucola
- 40 g vers geraspte Pecorino
- Extra vergine olijfolie
- Versgemalen zwarte peper
- Zeezout naar smaak
Bereiding
- Meng de bloem, gist en het water. Voeg daarna het zout en de olijfolie toe en kneed het deeg 10–15 minuten tot het glad en elastisch is. Laat het 1½ tot 2 uur rijzen, of tot het in volume is verdubbeld.
- Verwarm de oven (liefst met pizzasteen of pizzastaal) zo heet mogelijk, bij voorkeur 250–300 °C.
- Verdeel het deeg in twee bollen en rol of rek ze uit tot mooie dunne pizza's.
- Verdeel eerst de mozzarella en provolone over het deeg. Leg vervolgens de courgettelinten, artisjokharten en kappertjes erop. Besprenkel met een klein beetje olijfolie.
- Bak de pizza 7–10 minuten (afhankelijk van je oven), totdat de bodem goudbruin en krokant is en de kaas prachtig is gesmolten.
- Rooster ondertussen de pijnboompitten kort goudbruin in een droge koekenpan.
- Haal de pizza uit de oven en werk af met de geroosterde pijnboompitten, een royale hand rucola, vers geraspte Pecorino, een scheutje extra vergine olijfolie en wat zwarte peper.
Serveertip
Serveer direct met een goed glas gekoelde Pinot Grigio of een frisse Sauvignon Blanc. Deze pizza is licht, romig en fris tegelijk – precies wat je wilt op een warme zomerdag.
Grilled red Spring onions
Grilled Red Spring Onions with Lemon Herb Butter
Ingredients (Serves 4)
- 2 bunches of red spring onions
- 2 tbsp olive oil
- 50 g (3½ tbsp) unsalted butter, softened
- 1 garlic clove, finely minced
- 1 tbsp finely chopped fresh parsley
- 1 tsp lemon zest
- 1 tsp fresh lemon juice
- Salt and freshly ground black pepper
- Optional: freshly grated Parmesan or crumbled feta
Instructions
- In a small bowl, mix the softened butter with the garlic, parsley, lemon zest, lemon juice, salt, and pepper.
- Trim only the roots from the spring onions, leaving the green tops intact. Brush the onions with olive oil.
- Grill over medium-high heat for 2–3 minutes per side, until lightly charred and tender.
- Transfer to a serving platter and immediately spoon the herb butter over the hot onions so it melts.
- Finish with grated Parmesan or crumbled feta, if desired, and a little extra lemon zest.
Serve with
- Grilled ribeye or sirloin steak
- Grilled salmon or prawns
- Baked or grilled potatoes
- Crusty sourdough bread to soak up the melted butter
Asian Variation
Instead of the herb butter, drizzle the grilled onions with:
- 2 tbsp soy sauce
- 1 tbsp toasted sesame oil
- 1 tsp honey
- 1 tsp freshly grated ginger
Finish with toasted sesame seeds and sliced scallions.
Gegrilde rode lente-ui met citroen-kruidenboter
Ingrediënten (4 personen)
- 2 bosjes rode lente-ui
- 2 el olijfolie
- 50 g zachte roomboter
- 1 teen knoflook, fijngehakt
- 1 el fijngehakte peterselie
- 1 tl citroenrasp
- 1 tl citroensap
- Zout en versgemalen zwarte peper
- Optioneel: Parmezaanse kaas of verkruimelde feta
Bereiding
- Meng de boter met knoflook, peterselie, citroenrasp, citroensap, zout en peper.
- Snijd alleen de worteltjes van de lente-ui af; laat het groen eraan. Bestrijk de uien met olijfolie.
- Gril ze op een hete barbecue ongeveer 2-3 minuten per kant, tot ze mooie grillstrepen hebben en net zacht zijn.
- Leg ze op een schaal en laat direct een flinke lepel kruidenboter erover smelten.
- Maak eventueel af met wat Parmezaanse kaas of feta en een beetje extra citroenrasp.
Lekker erbij
- Gegrilde entrecote of ribeye
- Zalm of gamba's
- Gepofte aardappelen
- Knapperig zuurdesembrood om de gesmolten boter op te deppen
Variatie
Maak een Aziatische versie door de boter te vervangen door een mengsel van:
- 2 el sojasaus
- 1 el sesamolie
- 1 tl honing
- 1 tl geraspte gember
- geroosterde sesamzaadjes en bosui als garnering
Die combinatie met de zoete, gegrilde rode lente-ui is echt heerlijk.
Elderflower cordial
Elderflower Cordial (Elderflower Syrup)
Makes about 1.5 litres
Ingredients
- 20–25 large fresh elderflower heads
- 3 organic lemons
- 1 litre water
- 1 kg granulated sugar
Method
- Pick the elderflowers on a dry, sunny day when they are fully open and fragrant.
- Gently shake the flower heads to remove any insects. Do not wash them, as this will remove much of the pollen and aroma.
- Slice 2 lemons thinly and juice of the 3rd lemon
- Bring the water to a boil and stir in the sugar until completely dissolved.
- Allow the syrup to cool slightly, then add the elderflowers, lemon slices and lemon juice.
- Cover and leave to infuse for 24–48 hours in a cool place.
- Strain through a fine sieve, muslin cloth or cheesecloth.
- Bring the strained liquid back to a gentle boil.
- Pour into sterilised bottles and seal immediately, keep in the fridge.
To Serve
Dilute approximately:
- 1 part cordial to 5–6 parts still or sparkling water
It is also delicious with:

- iced tea
- gin and tonic
- fresh strawberries
- lemon cakes and madeleines
Vlierbloesemsiroop
Ingrediënten
Voor ongeveer 1,5 liter siroop:
- 20–25 grote schermen verse vlierbloesem
- 3 biologische citroenen
- 1 liter water
- 1 kg kristalsuiker
Bereiding
- Pluk de vlierbloesem op een droge zonnige dag.
- Schud de schermen voorzichtig uit zodat eventuele insecten verdwijnen. Niet wassen, want dan verlies je veel aroma.
- Snijd 2 citroenen in dunne plakken en pers 1 citroen uit
- Breng het water aan de kook en los de suiker erin op.
- Laat iets afkoelen en voeg de vlierbloesem, citroenschijven en het citroensap toe.
- Dek af en laat 24–48 uur trekken op een koele plaats.
- Zeef door een fijne zeef of kaasdoek.
- Breng de vloeistof opnieuw aan de kook.
- Giet in gesteriliseerde flessen sluit direct af en bewaar het in de ijskast
Gebruik
- Verdun ongeveer 1 deel siroop op 5–6 delen water.
- Heerlijk in bruiswater, prosecco, thee of over aardbeien.
Lemon-mint madeleines with almond flour
Citroen-munt madeleines met amandelmeel
(ca. 24 madeleines)
Ingrediënten
- 130 g bloem
- 50 g amandelmeel
- 1 tl bakpoeder
- Snuf zout
- 4 eieren (M)
- 150 g fijne kristalsuiker
- Rasp van 2 biologische citroenen
- 2 el zeer fijngehakte verse munt of munt-getrokken boter
- 180 g beurre noisette (bruine boter) of gesmolten boter, afgekoeld
Bereiding
- Maak eerst de beurre noisette: smelt de boter en laat deze zachtjes kleuren tot hij nootachtig ruikt. Laat afkoelen.
- Klop de eieren en suiker 4–5 minuten tot een bleek en luchtig mengsel.
- Meng bloem, amandelmeel, bakpoeder en zout en spatel dit voorzichtig door het eimengsel.
- Voeg citroenrasp en munt toe.
- Spatel als laatste de afgekoelde beurre noisette erdoor.
- Dek af en laat het beslag minimaal 2 uur, liefst een nacht, rusten in de koelkast.
- Verwarm de oven voor op 210°C.
- Vet de madeleinevorm in en bestuif licht met bloem.
- Vul de vormpjes voor ongeveer ¾ met koud beslag.
- Bak 3 minuten op 210°C, verlaag daarna de temperatuur naar 180°C en bak nog 5–7 minuten tot de madeleines goudbruin zijn.
- Laat 2 minuten rusten in de vorm en stort vervolgens op een rooster.
Lemon-mint madeleines with almond flour
(makes about 24 madeleines)
Ingredients
- 130 g all-purpose flour
- 50 g almond flour
- 1 tsp baking powder
- Pinch of salt
- 4 medium eggs
- 150 g caster sugar
- Zest of 2 organic lemons
- 2 tbsp finely chopped fresh mint or mint-infused butter
- 180 g brown butter (beurre noisette) or melted butter, cooled
Method
- Prepare the brown butter by gently heating the butter until golden and nutty. Allow to cool.
- Whisk the eggs and sugar for 4–5 minutes until pale and fluffy.
- Combine the flour, almond flour, baking powder and salt. Fold gently into the egg mixture.
- Add the lemon zest and mint.
- Fold in the cooled brown butter.
- Cover and chill the batter for at least 2 hours, preferably overnight.
- Preheat the oven to 210°C.
- Grease and lightly flour the madeleine moulds.
- Fill each mould about three-quarters full with the cold batter.
- Bake for 3 minutes at 210°C, then reduce the temperature to 180°C and bake for another 5–7 minutes until golden.
- Leave in the tin for 2 minutes before turning out onto a wire rack.
Zucchini blossom with baby zucchini
Stuffed Zucchini Blossoms with Ricotta, Lemon and Herbs
Serves 4 as a starter
Ingredients
- 12 zucchini blossoms with baby zucchini attached
- 250 g ricotta
- 40 g freshly grated Parmesan
- Zest of 1 lemon
- 1 tbsp finely chopped mint or basil
- Salt and freshly ground black pepper
- Olive oil for frying
For a light batter (optional)
- 75 g all-purpose flour
- 100 ml sparkling water, ice cold
- Pinch of salt
Preparation
- Gently open the blossoms and remove the stamens if desired.
- Mix the ricotta, Parmesan, lemon zest, herbs, salt, and pepper.
- Spoon or pipe about 1 tablespoon of filling into each blossom.
- Twist the tips of the petals to close them.
Option 1: Pan-fried
- Heat a generous splash of olive oil in a large skillet over medium heat.
- Cook the blossoms for 2–3 minutes per side until lightly golden and the baby zucchini is tender.
- Finish with a squeeze of lemon juice and flaky sea salt.
Option 2: Lightly battered and fried
- Whisk together the flour, sparkling water, and salt until just combined. Do not overmix.
- Dip each blossom into the batter.
- Fry at 180°C (350°F) for 1–2 minutes until crisp and pale golden.
- Drain briefly on paper towels and season with sea salt.
To Serve
Serve immediately with:
- Lemon wedges
- A drizzle of good extra-virgin olive oil
- A few shavings of Parmesan
Japanese Tempura Version
If the blossoms are exceptionally fresh, this is arguably the most elegant preparation.
Ingredients
- Zucchini blossoms with attached baby zucchini
- 100 g tempura flour (or equal parts flour and cornstarch)
- 150 ml ice-cold sparkling water
- Neutral frying oil
Method
- Mix the batter very lightly; lumps are desirable.
- Dip the blossoms into the batter.
- Fry at 180°C (350°F) for 60–90 seconds.
- Sprinkle with sea salt.
Serve with a simple dipping sauce made from:
- 3 tbsp dashi
- 1 tbsp soy sauce
- 1 tbsp mirin
A Simple Pasta with Zucchini Blossoms
A wonderful summer dish.
Ingredients
- 300 g fresh tagliolini or tagliatelle
- 8 zucchini blossoms with baby zucchini attached
- 1 shallot, finely chopped
- 2 tbsp butter or olive oil
- Zest of ½ lemon
- Parmesan to finish
Method
- Slice the baby zucchini thinly and tear the blossoms into strips.
- Sauté the shallot gently in butter.
- Add the zucchini and cook for 2 minutes.
- Add the blossoms and cook for 30 seconds.
- Toss with the cooked pasta and a little pasta water.
- Finish with lemon zest and Parmesan.
The result is light, fragrant, and very much in the spirit of summer cooking in Provence and Italy.
Gevulde courgettebloemen met ricotta, citroen en kruiden
Voor 4 personen als voorgerecht
Ingrediënten
- 12 courgettebloemen met klein courgettetje eraan
- 250 g ricotta
- 40 g versgeraspte Parmezaanse kaas
- Rasp van 1 citroen
- 1 el fijngehakte munt of basilicum
- Zout en versgemalen zwarte peper
- Olijfolie om te bakken
Voor een licht beslag (optioneel)
- 75 g bloem
- 100 ml ijskoud bruiswater
- Snuf zout
Bereiding
- Open de bloemen voorzichtig en verwijder desgewenst de meeldraden.
- Meng de ricotta met de Parmezaan, citroenrasp, kruiden, zout en peper.
- Vul elke bloem met ongeveer 1 eetlepel van het mengsel.
- Draai de puntjes van de bloemblaadjes voorzichtig dicht zodat de vulling niet ontsnapt.
Optie 1: Gebakken in de pan
- Verhit een royale scheut olijfolie in een koekenpan op middelhoog vuur.
- Bak de bloemen 2–3 minuten per kant tot ze licht goudbruin zijn en het courgettetje gaar is.
- Werk af met een kneepje citroensap en wat grof zeezout.
Optie 2: In een licht beslag gefrituurd
- Meng de bloem, het bruiswater en het zout kort tot een dun beslag. Een paar klontjes zijn geen probleem.
- Haal de bloemen door het beslag.
- Frituur ze 1–2 minuten op 180°C tot ze licht goudkleurig en knapperig zijn.
- Laat kort uitlekken op keukenpapier en bestrooi met zeezout.
Serveren
Serveer direct met:
- Partjes citroen
- Een scheut goede extra vergine olijfolie
- Enkele schilfers Parmezaanse kaas
Japanse tempura van courgettebloemen
Als de bloemen uitzonderlijk vers zijn, is dit een van de mooiste bereidingen.
Ingrediënten
- Courgettebloemen met klein courgettetje eraan
- 100 g tempurabloem (of 50 g bloem en 50 g maïzena)
- 150 ml ijskoud bruiswater
- Neutrale olie om te frituren
Bereiding
- Meng het beslag heel kort; klontjes zijn juist gewenst.
- Haal de bloemen door het beslag.
- Frituur ze 60–90 seconden op 180°C.
- Bestrooi direct met wat zeezout.
Dipsaus
Meng:
- 3 el dashi
- 1 el sojasaus
- 1 el mirin
Serveer de warme tempura direct met deze saus.
Zomerse pasta met courgettebloemen
Een eenvoudig maar verfijnd gerecht dat veel wordt gemaakt in Italië.
Ingrediënten
- 300 g verse tagliolini of tagliatelle
- 8 courgettebloemen met klein courgettetje eraan
- 1 sjalot, fijngehakt
- 2 el boter of olijfolie
- Rasp van ½ citroen
- Versgeraspte Parmezaanse kaas
Bereiding
- Snijd de kleine courgettes in dunne plakjes en scheur de bloemen in repen.
- Fruit de sjalot zachtjes in de boter.
- Voeg de courgette toe en bak ongeveer 2 minuten.
- Voeg de bloemen toe en bak nog 30 seconden.
- Meng met de gekookte pasta en een scheutje kookvocht.
- Werk af met citroenrasp en Parmezaanse kaas.
Extra lekker
Voeg op het einde een klein klontje gezouten boter toe. Dat geeft de saus een prachtige glans en een subtiele romigheid die uitstekend past bij de zachte smaak van de courgettebloemen.

Ingredients:
For the carrot cake
- 140ml , vegetable oil, plus extra for greasing
- 2 free-range eggs
- 200g light brown sugar
- 300g grated carrot (grated weight)
- 100g raisins
- 75g pecans or walnuts chopped
- 180g self raising flour
- 1 pinch salt
- ½ tsp bicarbonate of soda
- 1 tsp ground cinnamon
- ½ tsp freshly grated nutmeg
- ½ tsp mixed spices
For the orange cream cheese icing
- 150g cream cheese chilled (see recipe tips)
- 150 cottage cheese (or 50 gram butter)
- 1 tsp vanille extract
- 50g icing sugar sifted
- 1 orange, zest only
Method
- Preheat the oven to 150C. Oil and line a 900g loaf tin (approximately 13x23cm) with baking paper.
- For the carrot cake, beat the eggs in a large bowl, then add the oil, brown sugar, grated carrot, raisins and chopped nuts.
- Sift in the remaining cake ingredients and mix using a wooden or large metal spoon until well combined.
- Pour the mixture into the prepared loaf tin, smooth the surface and bake for 1 hour 15 minutes, or until a skewer inserted into the middle comes out clean.Remove from the oven and allow the cake to cool in the tin for about 5 minutes before removing. Cool completely on a wire rack before serving.
- For the icing, beat the cream cheese and cottage cheese together in a bowl until well combined (take care not to overbeat, stop as soon as the ingredients are combined). Add the vanilla extract, icing sugar and orange zest and mix until the icing is smooth.
- Using a palette knife, spread the icing evenly over the cooled cake, dipping the knife into a bowl of hot water if the icing is hard to spread out. Cut into slices to serve.
Pointed cabbage soup with mustard
Ingredients (serves 4)
- 1 pointed cabbage (thinly sliced)
- 1 onion (finely chopped)
- 1 clove garlic (minced)
- 1 medium potato (diced, for thickening)
- 1 liter vegetable stock
- 100 ml cream (or crème fraîche)
- 1–2 tbsp coarse mustard (e.g. Dijon or whole grain mustard)
- A knob of butter or a splash of olive oil
- Salt and pepper
- Optional: bacon lardons or crispy pancetta
Method
- Sauté the base
Heat butter or oil in a pot and gently cook the onion and garlic until soft and translucent. - Add cabbage and potato
Add the sliced cabbage and diced potato. Cook for 3–5 minutes, stirring occasionally. - Simmer
Pour in the vegetable stock and let it simmer gently for 15–20 minutes, until everything is tender. - Blend (or not!)
- For a smooth soup: blend with an immersion blender
- For a chunkier texture: blend partially or leave as is
- Finish
Stir in the cream and mustard. Taste and season with salt and pepper. - Serve
Garnish with crispy bacon, fresh herbs or old chees
Spitskoolsoep met mosterd
Ingrediënten (4 personen)
- 1 spitskool (in dunne reepjes)
- 1 ui (gesnipperd)
- 1 teen knoflook (fijngehakt)
- 1 middelgrote aardappel (in blokjes, voor binding)
- 1 liter groentebouillon
- 100 ml room (of crème fraîche)
- 1–2 el grove mosterd (bijv. Dijon of Zaanse)
- Klontje boter of scheut olijfolie
- Peper en zout
- Optioneel: spekjes of krokante pancetta
Bereiding
- Fruit de basis
Verhit boter/olie en fruit ui + knoflook zachtjes glazig. - Voeg kool en aardappel toe
Doe de spitskool en aardappel erbij en bak kort mee (3–5 min). - Koken
Schenk de bouillon erbij en laat 15–20 minuten zacht koken tot alles gaar is. - Pureren (of niet!)
- Voor een gladde soep: alles pureren met staafmixer
- Voor een grovere soep: deels pureren of zo laten
- Afmaken
Roer room en mosterd erdoor. Proef en breng op smaak met peper en zout. - Serveren
Garneer met uitgebakken pancetta, verse kruiden of "homemade" knoflook croutons, oude kaas, mosterdzaad

Ingredients
- 140 g melted butter
- 180 g dark brown sugar
- 30 g granulated sugar
- 1 large egg + 1 extra egg yolk
- 1 tsp vanilla extract
- 190 g all-purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 150 g pecans (lightly toasted, roughly chopped)
- Optional: 100 g dark chocolate chunks
Preparing
- In a bowl, mix the melted butter with both sugars (do not whip).
- Add the egg, extra yolk, and vanilla extract; stir until smooth.
- In a separate bowl, combine flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet mixture and mix briefly (do not overmix).
- Fold in the pecans (and chocolate, if using).
- Chill the dough for 30–60 minutes (important!).
- Scoop into large balls (about golf ball size).
- Bake at 180°C / 350°F for 9–11 minutes
→ edges golden, centers still soft - Let cool on the baking sheet (they will continue to set).
Sprinkle a few flakes of sea salt on top right after baking, it really enhances the pecan flavor.
Chewey pecan cookies
Ingrediënten
- 150 g zachte boter
- 150 g bruine basterdsuiker
- 50 g kristalsuiker
- 1 ei
- 1 tl vanille-extract
- 200 g bloem
- ½ tl bakpoeder
- snuf zout
- 150 g pecannoten (grof gehakt)
- optioneel: 100 g pure chocolade (stukjes)
👩🍳 Bereiding
- Oven voorverwarmen op 180°C (boven-/onderwarmte).
- Klop de boter met beide suikers romig.
- Voeg het ei en vanille toe en meng goed.
- Meng in een andere kom bloem, bakpoeder en zout.
- Voeg dit toe aan het botermengsel en roer tot een deeg.
- Spatel de pecannoten (en eventueel chocolade) erdoor.
- Maak bolletjes van het deeg en leg ze op een bakplaat met bakpapier.
- Druk ze licht plat.
- Bak 10–12 minuten tot ze goudbruin zijn.
- Laat afkoelen op een rooster (ze worden nog steviger).
