Lamb Cutlets with New Potatoes, Mint and Pea Puree

These classis flavours epitomise spring on a plate - lamb, peas, new potatoes and mint

Ingredients
6-8 lamb cutlets
1 clove garlic
2 sprigs rosemary
12 new potatoes
1 small bunch mint
300g frozen peas
20g butter
4 tablespoons olive oil
good splash of white wine
salt and pepper

Method
Strip the rosemary leaves off the stalks and finely chop together with the garlic. Sprinkle over the lamb cutlets with 2 tablespoons olive oil, salt and pepper. Leave to marinate for a few minutes.

Place the potatoes and the mint (keep some back to finish the dish) in a small pot with cold water and salt and bring to the boil. Cook for about 10 minutes until tender, drain off. Return the potatoes to the pan with 1 tablespoon olive oil and season with salt and pepper. Keep warm.

In another pot, bring water to the boil and blanche the peas (the brief cooking of vegetables to retain their colour and crispness) for 3 minutes. Drain through a sieve. Return to the pan; add the cube of butter and salt and pepper to taste. Blend with a stick blender to a puree or alternatively in a food processor.

Heat a frying pan on medium-high heat. Fry the lamb cutlets for 2 minutes on each side. Deglaze the pan with a splash of white wine to create a sauce. Serve the lamb cutlets with the new potatoes (sprinkled with the reserved mint leaves) and the pea puree. Spoon the lamb juices over the meat.

6-8 lamskoteletjes
1 teentje knoflook
2 takjes rozemarijn
12 nieuwe aardappeltjes
1 klein bosje munt
300g diepvries doperwten
20g boter
4 eetlepels olijfolie
zout en peper

Bereiding
Haal de blaadjes van de takjes rozemarijn en hak ze fijn samen met de knoflook. Bestrooi de lamskoteletjes met de gehakte kruiden, knoflook en 2 eetlepels olijfoiie, zout en peper. Laat enkele minuten marineren.

Doe de aardappeltjes samen met de munt (bewaar een paar blaadjes voor het afmaken van het gerecht) in een pannetje met koud water en zout, breng aan de kook. Kook ze in ongeveer 10 minuten gaar, giet ze af. Schep de aardappeltjes terug in de pan met 1 eetlepel olijfolie, zout en peper naar smaak. Houd ze warm.

Breng een ander pannetje met water aan de kook, blancheer hier de erwtjes in voor 3 minuten. Giet ze af in een zeef. Doe terug in de pan, voeg het cupje boter toe en breng op smaak met zout en peper. Pureer grof met een staafmixer.

Verhit een koekenpan op medium hoog vuur. Bak de lamskoteletjes voor 2 minuten aan elke kant. Blus af met een scheutje witte wijn. Serveer de lamskoteletjes met de nieuwe aardappeltjes (bestrooi met de resterende munt) en erwtenpuree. Lepel de jus van de lamskoteletjes over het vlees heen.


Steak with Endive and Anchovy Dressing

A lighter way to enjoy a good steak. If you're lucky enough to be able to barbecue, this would would perfectly with the smokey flavour it imparts.

Serves 4

Ingredients
4 heads Belgian endive
1 shallot
125g rocket
500g bavette
1 tin anchovies
1 clove garlic
4 tablespoons olive oil
75ml sunflower oil
1 tablespoon Red wine vinegar
1,5 teaspoons Dijon mustard
Salt and pepper

Method
Make the dressing. Place 4 anchovy fillets in a bowl and mash with a fork. Finely chop the garlic and add to the bowl with anchovies with 1,5 teaspoons Dijon mustard and 1 tablespoon red wine vinegar. Gradually whisk in 75 ml sunflower oil and season with salt and pepper. Set aside.

Click off the leaves from the endive and place in a bowl with the rocket. Finely slice the shallot into thin rings.

Heat a grill pan over medium-high heat. Season the bavette steak with salt, pepper and 2 tablespoons olive oil.

Grill the bavette for 2-3 minutes on each side. It should still be medium-rare in the centre. Remove from the pan and rest for about 3 minutes on a plate lightly covered with a piece of aluminium foil.

Mix the salad leaves with the sliced shallot and 2 tablespoons olive oil. Divide between 4 plates. Finely slice the bavette and divide over the salad. Spoon over the anchovy dressing and serve immediately.

4 stronken witlof
1 sjalot
125g rucola
500g bavette
1 blikje ansjovis
1 teentje knoflook
4 eetlepels olijfolie
75ml zonnebloemolie
1 eetlepel rode wijn azijn
1,5 theelepel Dijonmosterd
zout en peper

Bereiding
Maak de dressing. Doe 4 ansjovis in een kom en prak het fijn met een vork. Snijd het knoflookteentje fijn en voeg het toe aan de ansjovis met 1,5 theelepel Dijon mosterd en 1 eetlepel rode wijnazijn. Voeg geledelijk 75 ml zonnebloemolie toe aan de kom en breng op smaak met zout en peper. Zet opzij.

Maak de blaadjes van de witlof los en doe ze in een kom met de rucola. Snijd het sjalotje fijn in dunne ringen.

Verwarm een grillpan op medium-hoog vuur. Bestrooi de bavette met zout en peper en 2 eetlepels olijfolie.

Grill de bavette 2-3 minuten aan elke kant. Het moet nog echt rood van binnen zijn. Haal ze uit de pan en laat 3 minuten rusten, licht afgedekt met een stukje aluminiumfolie op een bord.

Meng de salade met de sjalot en 2 eetelepels olijfolie. Verdeel het over 4 borden. Snijd de bavette in dunne reepjes en verdeel over de salade. Lepel de ansjovis dressing er overheen en serveer direct.


White Asparagus with Shiitake Mushrooms and Peas

If you're luck enough to have a bunch of 'white gold', here is a great alternative vegetarian recipe for you to try.

Serves 2

Ingredients
500g white asparagus
150g peas (fresh or frozen)
300g shitake mushrooms
1 shallot
1 vegetable stock cube
40ml mirin
1 small bunch chives
2 tablespoons olive oil
3 tablespoons soya sauce
salt and pepper

Method
Peel the asparagus with a vegetable peeler, cut off the woody ends and discard. Place the asparagus in a pan with cold water and salt and bring to the boil. Turn off the heat and leave in the hot water for 5 minutes. Remove the asparagus from the water and drain well on a tea towel or kitchen paper. Cut the asparagus into 3 pieces.

Dissolve half the stock cube in 200 ml hot water. Remove the stalks from the shitake and cut them into quarters. Finely slice the shallot. Heat a wok over medium heat with 2 tablespoons olive oil and fry the shallot for 1 minute.

Bring a small pan with salted water to the boil. Add the peas, boil for 1 minute and drain off. Add the shitake to the wok and fry for 2 minutes. Add the asparagus and stir fry for a further 2 minutes.

Add the mirin, 3 tablespoons soya sauce and 100 ml stock to the wok and allow it reduce slightly. Finely chop the chives and sprinkle over the asparagus. Divide between 2 plates and serve.

500g witte asperges
150g doperwtjes (vers of diepvries)
300g shiitake paddenstoelen
1 sjalot
1 groenten bouillonblokje
40ml mirin
1 kleine bos bieslook
2 eetlepels 0lijfolie
3 eetlepels sojasaus
zout en peper

Bereiding
Schil de asperges met een dunschiller en snijd het onderste harde stukje eraf. Breng de asperges in een pan met koud water en zout  aan de kook. Zet het vuur af en laat ze 5 minuten staan.

Los de helft van het bouillonblokje op in 200 ml warm water. Haal de steeltjes van de shiitakes af en snijd ze in vieren. Snijd het sjalotje in dunne ringetjes. Verwarm een wok op medium vuur met 2 eetlepels olijfolie en bak sjalotje voor 1 minuut.

Breng een pannetje met water en zout aan de kook, doe de erwtjes erin en kook voor 1 minuut en giet af. Voeg shiitakes toe aan de wok en bak 2 minuten. Voeg asperges toe en wok nog eens 2 minuten.

Voeg mirin en sojasaus toe aan de wok en laat licht inkoken. Snijd bieslook fijn en strooi het over de asperges. Verdeel de asperges over 2 borden en serveer.


Spanish Sea Bass

The deep flavours of red wine and citrus pair beautifully with sea bass, one of the most versatile and highly-regarded fish.

Serves 2

Ingredients
2 sea bass fillets of 150g each
200g cherry tomatoes
1 lemon
2 cloves garlic
1 sprig thyme
600g roseval potatoes
50g black olives
1 bay leaf
1 red onion
1 orange
5 tablespoon olive oil
100ml red wine
salt and pepper

Method
Finely chop the onion and garlic. Peel the potatoes and cut into chunks. Slice the cherry tomatoes in half.

Using a vegetable peeler, slice 3 pieces of zest from both the lemon and orange.

Heat a frying pan with 2 tablespoons olive oil and sweat the onion, garlic, potatoes and bay leaf, covered with a lid until the potatoes begin to soften. Deglaze with 100 ml red wine and the juice from half the orange. Reduce by half, then add the tomatoes, thyme, lemon and orange zest. Mix well and cook for 1 minute. Season with salt and pepper.

Remove the pin-bones from the sea bass with a fish tweezer and season the fillets with salt and pepper. Heat a frying pan with 2 tablespoons olive oil and fry the sea bass, skin-side down for 3 minutes. Turn the fish over a fry for a further 1 minute.

Divide the potatoes between 2 plates. Lay the fish on top, drizzle with a little extra olive oil and serve.

2 zeebaarsfilets  a 150 gram per stuk
200g cherry tomaatjes
1 citroen
2 teentjes knoflook
1 takje tijm
600g roseval aardappeltjes
50g zwarte olijven
1 laurierblad
1 rode ui
1 sinaasappel
5 eetlepels olijfolie
100ml rode wijn
zout en peper

Bereiding
Snijd de ui en de knoflook fijn. Schil de aardappelen en snijd ze in grove blokjes. Snijd de tomaatjes in tweeen.

Trek 3 schilletjes van de citroen en de sinaasappel met een dunschiller.

Verwarm een koekenpan met 2 eetlepels olijfolie en smoor hierin het laurierblad, de ui , knoflook en de aardappels zachtjes, afgedekt met een deksel totdat de aardappelen gaar zijn. Blus af met de rode wijn en wat sap van ½  sinaasappel, kook voor de helft in. Voeg dan de tomaatjes, tijm, schilletjes van de sinaasappel en citroen toe en schep voorzichtig alles door elkaar, verwarm 1 minuut.  Breng op smaak met zout en peper.

Verwijder de graatjes van de zeebaars met een pincet en bestrooi met zout en peper. Verwarm een koekenpan op medium vuur met 2 eetlepels olijfolie en bak de zeebaars, vel kant naar beneden 3 minuten. Draai om en bak nog 1 minuut.

Verdeel de aardappelen over 2 borden. Leg de vis er bovenop, druppel er wat olijfolie overheen en serveer direct.


Rocket and Blue Cheese Soup

And easy, fresh and vibrant soup is given a zing with the addition of blue cheese.

Serves 2

Ingredients
1 clove garlic
1 shallot
350g rocket leaves
50g butter
1 organic vegetable stock cube
100g blue cheese
125g crème fraiche
2 floury potatoes
3 tablespoons olive oil
salt and pepper

Method
Finely chop the garlic clove and shallot. Peel the potatoes and cut into cubes. Dissolve the vegetable stock cube in 1,2 liters hot water. Crumble the blue cheese.

Heat a pan over medium heat with 3 tablespoons olive oil and the butter and sweat the shallot for 3 minutes. Add the garlic clove and fry for a further 1 minute.

Add the stock and potatoes and bring to the boil. Cook for 15 minutes until soft.

Add the rocket and three-quarters of the blue cheese and bring to the boil. Blend the soup with a stick blender or blender until smooth and season with salt and pepper.

Reheat the soup and spoon into a bowls. Dollop on some crème fraiche and sprinkle over the remaining blue cheese.

Delicious served with sourdough bread

1 teentje knoflook
1 sjalotje
350g rucola
50g boter
1 biologisch groentenbouillonblokje
100g blauwe kaas
125g creme fraiche
2 kruimige aardappels
3 eetlepels olijfolie
zout en peper

Bereiding
Snijd het sjalotje en knoflook fijn en los het groentenbouillonblokje op in 750 ml warm water. Schil de aardappels en snijd in stukjes. Kruimel de blauwe kaas.

Verwarm een pan op medium vuur met 3 eetlepels olijfolie en de boter en bak het sjalotje 3 minuten. Voeg de knoflook toe en bak nog een 1 minuut.

Voeg daarna de bouillon en aardappels toe en breng aan de kook. Kook 15 minuten totdat de aardappels zacht zijn.

Voeg de rucola en drie-kwart van de blauwe kaas toe en breng aan de kook. Pureer de soep glad met een staafmixer of in een blender en breng op smaak met zout en peper.

Warm de soep voorzichtig op en verdeel over kommen. Schep een lepeltje creme fraiche op de soep en kruimel de resterende blauwe kaas er overheen.

Heerlijk geserveerd met zuurdesembrood


Honey Mustard Chicken with Savoy Cabbage

The classic flavours of honey and mustard characterise this chicken dish. Give it a spring twist with tarragon and savoy cabbage and you have a winner of a dish.

Serves 2

Ingredients
2 chicken Maryland’s (one piece with the drumstick and thigh attached)
400g new potatoes
125ml cream
1 tablespoon wholegrain mustard
1 small bunch tarragon
1/2 or a small savoy cabbage
75g pancetta pancetta
4 tablespoons olive oil
120ml white wine
1 tablespoon honey
salt and pepper

Method
Preheat an oven to 200°C. Remove the outer leaves from the savoy cabbage. Cut the cabbage into quarters, remove the hard core and shred the leaves into thin strips.

Place the baby new potatoes in a pan of salted water, bring to the boil and cook for 5 minutes.

Season the chicken Maryland’s with salt and pepper. Heat a frying pan with 2 tablespoons olive oil and fry the chicken until golden on all sides. Finley chop the tarragon leaves. Deglaze with 120 ml white wine and cook until reduced by half. Add the cream, half the tarragon, mustard and 1 tablespoon honey. Cover and place in the oven for 10 minutes. Add the potatoes and return to the oven for about 15 minutes.

Heat a frying pan with 2 tablespoons olive oil. Cut the pancetta into thin strips and fry until golden brown. Remove from the pan and set aside. Add the cabbage and sweat for 10 minutes. Add the pancetta and season with salt and pepper.

Remove the chicken from the oven. Divide the cabbage between 2 plates. Lay the chicken and potatoes on top, spoon over the sauce and sprinkle with the remaining tarragon.

2 kippenpoten
400g nieuwe aardappeltjes
125ml slagroom
1 eetlepel grove mosterd
1 klein bosje dragon
1/2 of een kleine savooiekool
75g pancetta
4 eetlepel olijfolie
120ml witte wijn
1 eetlepel honing
zout en peper

Bereiding
Verwarm oven voor op 200 C. Haal de buitenste bladeren van de savooiekool. Snijd de kool in vieren, snijd de harde kern eruit en snijd de kool in dunne reepjes.

Doe de krielaardappeltjes in een pannetje met water en zout, kook ze 5 minuten.

Bestrooi de kippenpootjes met zout en peper. Verwarm een koekenpan met 2 eetlepels olijfolie en bak de kippenpoten rondom goudbruin. Snijd de dragonblaadjes fijn. Blus de kip af met 125 ml witte wijn. Laat voor de helft inkoken,  voeg dan de slagroom, de helft van de dragon, mosterd en 1 eetlepel honing toe. Dek de pan af en zet de pan in de oven voor 10 minuten, voeg dan de aardappeltjes toe en zet de pan terug voor nog eens 10 minuten.

Verwarm 2 eetlepels olijfolie in een koekenpan. Snijd de pancetta in dunne reepjes en bak ze goudbruin. Haal ze uit de pan en zet opzij. Smoor de kool in de koekenpan voor 10 minuten. Voeg de pancetta toe aan de kool en breng op smaak met zout en peper.

Haal de pan uit de oven. Verdeel de kool over 2 borden. Leg de kip en aardappelen er bovenop en lepel over de saus en bestrooi met de resterende dragon.

Easter is going to be a little different this year. Instead of being together with family around the table, we’ll be together in smaller groups connecting most probably, through technology.

We still deserve to have something sweet and decedent whether it’s just 2 or 4 of us.

Our friends at Life of Pie have a put together some wonderful sweet treats for Easter.

You can choose between two boxes this Easter. A small box which contains small cakes and cake pops and a large box which contains a frosted cake with decorations so that you can decorate it home.

White Asparagus with Parmesan Fondue, Poached Egg and Prosciutto

A twist on the classic white asparagus and poached egg. Instead of the classic Hollandaise, we've paired it with Italian flavours of Parmesan and Prosciutto.

Serves 2

Ingredients
10 white asparagus
1 clove garlic
50g grated Parmesan
125ml cream
2 eggs
6 slices prosciutto
50g baby spinach
4 tablespoons olive oil
100ml white wine
20g butter
1 teaspoon sugar
capful white wine vinegar
salt and pepper

Method
Bring a pan of water to the boil for the eggs. Peel the asparagus with a vegetable peeler and cut a piece of the base off. Reserve the asparagus peelings.  Finely grate the garlic clove.

Heat a pan with 100 ml white wine and the grated garlic. Bring to the boil and reduce by half. Add the cream and cook to reduce slightly. Add half the Parmesan and whisk until smooth. Season with salt and pepper and set aside.

Place the asparagus in a pan with cold water; add salt to taste, 20 g butter and 1 teaspoon sugar. Lay the peelings over the asparagus so that they stay submerged. Bring to the boil and cook for 1 minute. Turn off the heat and leave the asparagus, covered with a lid, to cook through in the hot liquid, about 7-10 minutes depending on their size.

Add a capful of white wine vinegar to the pan of gently simmering water. Crack the eggs into a cup and add carefully to the simmering water. Poach for 2-3 minutes; the yolk should still remain soft. Remove from the water with a slotted spoon and drain on paper towel. Reheat the Parmesan fondue.

Remove the asparagus from the pan and drain on a tea towel. Divide the spinach between 2 plates and lay on the asparagus. Place the prosciutto slices around. Top the asparagus with a poached egg and spoon over the Parmesan fondue. Sprinkle over the remaining grated Parmesan and serve.

10 stukswitte asperges

50g geraspte Parmezaan
125ml  slagroom
2 eieren
6 pakjes proscuitto
50g jonge spinazie
4 eetlepels olijfolie
100ml witte wijn
20g boter
1 theelepel suiker
dopje witte wijnazijn
zout en peper

Bereiding
Breng een pannetje met water aan de kook voor de eieren. Schil de asperges met een dunschiller en snijd een stukje van de onderkant af. Bewaar de schilletjes. Rasp het knoflookteentje fijn.

Verwarm een pannetje met 60 ml witte wijn en de gesneden knoflook, kook voor de helft in. Voeg de slagroom toe en kook licht in. Voeg de helft van de Parmezaan toe en klop glad met eemn garde. Breng op smaak met zout en peper en zet opzij.

Doe de asperges in een pan met koud water en voeg zout naar smaak, 20 gr boter en 1 theelepel suiker toe. Leg de schilletjes er bovenop zodat de asperges onder het water blijven. Breng aan de kook, laat 1 minuut koken, zet dan het vuur uit en laat de asperges afgedekt nagaren in het hete vocht ongeveer 7-10 minuten afhankelijk van de dikte van de asperges.

Voeg een dopje witte wijnazijn toe aan de pan met zachtjes kokend water. Breek de eieren in een kopje en leg ze voorzichtig in het water. Pocheer ze voor 2-3 minuten. De dooier moet nog zacht zijn. Haal ze er uit met een schuimspaan en laat uitlekken. Warm de Parmezaan fondue op.

Haal de asperges uit de pan en laat ze goed uitlekken op een theedoek. Verdeel de spinazie over 2 borden en leg hierop de asperges. Leg de plakjes proscuitto er omheen. Leg het gepocheerde ei op de asperges en lepel de Parmezaan fondue over het ei. Strooi de resterende geraspte Parmezaan eroverheen en leg de spinazieblaadjes ernaast.


White Chocolate Yoghurt with Berries

Thinking of giving your kids a 'healthy' treat? Don't be fooled by the picture. This is super-easy to make and your children can help too. This recipe is like a good pair of jeans; you can dress it up or down as you like.

Serves 3-4

Ingredients
500ml natural farmhouse yoghurt
150g white chocolate
1 punnet blueberries
1 punnet black berries
1 punnet raspberries
1/2 tablespoon sugar

Method
Heat a pan of water over medium heat. Place the chocolate in a bowl and place the bowl over the pan of simmering water (the water must not boil). Let the chocolate melt gently.

Once the chocolate has melted, allow it to cool slightly. Add ½ cup yoghurt and mix well together. Add the remaining yoghurt and stir through.

Place the blue berries, blackberries and raspberries in a bowl and mix through ½ tablespoon sugar.

Divide the yoghurt between 3-4 glasses (or bowls).

Spoon the berries on top. Sprinkle over a little caster sugar and serve.

Ingrediënten
500ml boerennaturel yoghurt
150g witte chocolade
1 bakje zwarte bessen
1 bakje bramen
1 bakje frambozen
1/2 eetlepel suiker

Bereiding
Verwarm een pannetje water op medium vuur. Doe de chocolade in een kommetje en zet dit op het pannetje met kokend water (water mag nu niet meer koken), laat zachtjes smelten.

Als de chocolade gesmolten is, laat deze licht afkoelen. Voeg dan ½ kopje yoghurt toe en meng het goed door elkaar. Voeg daarna de rest van de yoghurt toe.

Doe de zwarte bessen, bramen en frambozen in een kommetje en meng er ½ eetlepel suiker doorheen

Verdeel de yoghurt over 3-4 glazen (kommetjes.)

Lepel het bessenmengsel erop. Bestrooi eventueel met wat fijne suiker.
