Smashed avocado and baked egg

Ingredients
4 slices bread of your choice
2 haas avocados
2 eggs
olive oil
salt and pepper
sprinkling of ground cumin

Method
Halve the avocados, remove the stones and scoop out the flesh. Coarsely mash in a bowl with fork and season with salt and pepper. If you wish, you can add a few drops of lemon juice.

Toast the bread until golden and crispy. Heat a non-stick frying pan with a splash of olive oil. Fry the eggs until cooked to your liking (we prefer sunny side up with a soft yolk). Season with a little salt and pepper.

Spread the mashed avocado on the toast and top with the fried egg. Sprinkle with a touch of ground cumin, before serving.

Challah French Toast

Challah is an enriched braided bread eaten by many cultures, most significantly associated with the Jewish Sabbath.

Ingredients
4 thick slices challah, crusts removed
2 eggs
200 ml milk
small splash vanilla extract
castor sugar, to taste
knob of butter
selection of red fruits and berries
maple syrup and icing sugar, to serve

Method
In a bowl, whisk the eggs, milk, vanilla extract and sugar (about 1 tablespoon), to taste.

Heat a non-stick frying pan with a knob of butter. While the pan and butter are heating up, soak the challah slices briefly in the eggy mixture. Fry them over a medium heat until golden on both sides.

Transfer to serving plates. Drizzle the french toast with maple syrup. Spoon over a selection of berries and red fruits and finish with a light dusting of icing sugar.

Scrambled Eggs

There's no better way to start off your day than with plate of creamy silken scrambled eggs. You'll find many recipes but our method for the perfect scrambled eggs will never let you down.

Ingredients
3 organic or free range eggs per person
a knob of butter
a splash of cream
salt and pepper

Method
Crack the eggs into a bowl and whisk lightly with a fork until they are well combined. In the meantime, heat a non-stick frying pan with a knob of butter over a medium-low heat. Season the eggs with salt and a touch of pepper.

Once the butter has melted as is frothy, add the eggs. It's important now to mix them too much. Using a wooden or rubber spatula, stir the eggs very gently until they begin to set edges. Cook the eggs the way you like to eat them, but we prefer what we call baveuse, which means still soft and runny.

When it reaches this, we turn off the heat, and add a little splash of cream. This stops the cooks process and and enriches the eggs. Serve as is, with toast or delicious accompanied with smoked salmon and freshly chopped chives.
