Celeriac and Chestnut Soup

A big bowl of warm soup is often the most simplest of pleasures. This time of year lends itself to such soups. We're inspired by the vegetables and flavours that are in season now. Celeriac and chestnuts are a marriage made in heaven.

Serves 2

Ingredients
1 onion
1 clove garlic
2 sticks celery
1kg celeriac
250g vacuum packed chestnuts
1 bay leaf
2 sprigs thyme
1 organic vegetable stock cube
125ml cream
30g panko breadcrumbs
4 tablespoons olive oil, plus extra to finish the dish
2 cloves
2 juniper berries
salt and pepper

Method

Finely chop the onion and garlic. Peel the celeriac and cut into 2 cm cubes. Finely chop the celery and cut the chestnuts in half. Dissolve the stock cube in 1 litre hot water.

Heat a pot over a medium heat with 2 tablespoons olive oil. Add the onion and celery and fry for 1 minute. Add the celeriac to the pot and fry, stirring regularly, for 5 minutes. Add the chestnuts, bay leaf, thyme sprigs, cloves and stock. Bring to the boil, turn down the heat and simmer for about 15-20 minutes until the celeriac is soft.

Remove the thyme sprigs and bay leaf from the pot. Blend to a thick soup with a stick blender. Season with salt and pepper and stir the cream through the soup. Heat a frying pan over medium heat with 2 tablespoons olive oil. Add the panko and fry until golden brown. Transfer the panko to a small bowl and set aside.

Divide the soup between 2 bowls. Sprinkle with the fried panko and drizzle with a few drops of olive oil.

Ingrediënten
1 ui
1 teentje knoflook
2 stengels bleekselderij
1kg knolselderij
250gr vacuüm zakje kastanjes
1 laurierblad
2 takjes tijm
1 biologisch groenten bouillonblokje
125 slagroom
30gr panko
4 eetlepels olijfolie, en extra voor het afmaken
2 kruidnagels
2 jeneverbessen
zout en peper

Bereiding

Snijd de ui en knoflook fijn. Schil de knolselderij en snijd in blokjes van 2 cm. Snijd de bleekselderij in dunne plakjes. Snijd de kastanjes in tweeën. Los het bouillonblokje op in 1 liter warm water.

Verwarm een pan op medium vuur met 2 eetlepels olijfolie. Voeg de ui en bleekselderij toe aan de pan en smoor 5 minuten. Voeg de knoflook toe en bak nog eens 1 minuut. Voeg de knolselderij toe aan de pan en bak, al roerend, nog eens 5 minuten. Voeg de kastanjes, laurierblad, tijmblaadjes, kruidnagel, jeneverbessen en bouillon toe. Breng aan de kook en laat 15-20 minuten zachtjes koken tot de knolselderij zacht is.

Verwijder het laurierblad en de tijm. Pureer tot een dikke soep met een staafmixer. Breng op smaak met zout en peper en roer de slagroom er doorheen. Verwarm een koekenpan op medium vuur met 2 eetlepels olijfolie. Voeg de panko toe en bak goudbruin. Haal de panko uit de pan en zet opzij in een kommetje.

Verdeel de soep over 2 kommen. Bestrooi met de gebakken panko (broodkruim) en besprenkel met een paar druppels olijfolie.


Brussel Sprouts with Lentils and Hummus

There is no ingredient quite like Brussel sprouts. You either love or loathe them! Most of us have childhood nightmares of the life being boiled out of them. In truth, they're a fantastic ingredient - super versatile and full of flavour. In this recipe, we've married them with flavours of the Middle East. An outstanding vegetarian dish and great way to eat your sprouts!

Serves 2

Ingredients
500g Brussel sprouts
1 x 400g tin lentils
1x 400g tin chickpeas
1 garlic clove
1 tablespoon tahini
1 tablespoon dukkah
2 tablespoons balsamic syrup
3 tablespoons olive oil
salt and pepper

Method

Drain the liquid from the chickpeas and place them in a bowl. Finely chop the garlic clove and add to the chickpeas together with 1 tablespoon tahini and 1 tablespoon olive oil. Blend with a stick blender or food processor until smooth. Season with salt and pepper and set aside.

Clean the Brussel sprouts and cut into quarters. Heat a wok over medium heat with 2 tablespoons olive oil and fry the sprouts for 5 minutes. Season with salt and pepper.

Drain the liquid from the lentils and heat gently in a pan.

Add the balsamic syrup to the spouts and mix well. Keep the sprouts warm.

Divide the hummus between 2 plates, spoon on the lentils and divide over the sprouts. Sprinkle over the dukkah and serve.

Ingrediënten
500gr spruitjes
1 x 400gr blikje linzen
1 x 400gr blikje kikkererwten
1 knoflookteentje
1 eetlepel tahini
1 eetlepel dukkah
2 eetlepels balsamicostroop
3 eetlepels olijfolie
zout en peper

Bereiding

Giet het water van de kikkererwten af en doe ze in een kom. Snijd knoflookteentje fijn, voeg toe aan kikkererwten samen met 1 eetlepel tahini en 1 eetlepel olijfolie. Maak met staafmixer of magimix fijn. Breng op smaak met zout en peper en zet opzij.

Maak spruitjes schoon en snijd ze in vieren. Verwarm een wok op medium vuur met 2 eetlepels olijfolie, wok de spruitjes voor 5 minuten. Breng op smaak met zout en peper.

Giet het vocht van de linzen af en warm ze zachtjes op in een pannetje.

Voeg de vincotto toe aan de spruitjes, meng goed door elkaar en houd warm.

Verdeel de humus over 2 borden, schep de linzen er bovenop en verdeel de spruitjes er overheen. Strooi de dukkah naar smaak over de spruitjes.

 


Kale Caesar Salad

We love the idea of taking a classic and giving a twist using healthy and seasonal ingredients. This twist on a Caesar salad is vegetarian and the perfect salad to eat on cold days.

serves 2

Ingredients
600g baby kale
1 x 400g tin chickpeas
90ml mayonnaise
1 lemon
60g grated Parmesan
2 slices spelt bread
1 teaspoon ground turmeric
8 tablespoons olive oil
1 teaspoon mustard
salt and pepper

Method

Preheat an oven to 200°C. Cut the bread into 2 cm cubes. Place in a roasting dish with 4 tablespoons olive oil and roast in the oven for about 10-15 minutes until golden and crisp.

Drain the liquid from the chickpeas and rinse them under cold water. Dry well on some kitchen paper. In a small bowl, mix the mayonnaise together with 2 teaspoons mustard, a few drops lemon juice, salt and pepper. Thin the dressing down with a little water. It should be the consistency of pouring cream.

Heat a frying pan over medium heat with 4 tablespoons olive oil and fry the chickpeas and turmeric until golden, about 3 minutes. Season with salt and pepper.

Add the baby kale to the pan and fry for a further 2 minutes or until just wilted.

Spoon the kale and chickpeas over 2 plates and drizzle over the dressing. Scatter over the croutons and grated Parmesan before serving.

600gr babyboerenkool
1 x 400gr blikje kikkererwten
90ml mayonaise
1 citroen
60gr bakje geraspte Parmezaan
2 sneetjes speltbrood
1 theelepel kurkumapoeder
8 eetlepels olijfolie
2 theelepels mosterd
zout en peper

Bereiding

Verwarm een oven voor op 200°C. Snijd het brood in blokjes van 2 cm. Doe ze in een ovenschaal en meng ze met 4 eetlepels olijfolie. Zet de schaal in de oven voor ongeveer 10-15 minuten totdat ze goudbruin en knapperig zijn.

Giet het vocht van de kikkererwten af en spoel ze af, in een zeef, onder koud water, dep ze droog met wat keukenpapier. Meng in een kommetje de mayonaise met 2 theelepels mosterd, een paar druppels citroensap, zout en peper. Verdun met een beetje koud water tot de dressing de dikte heeft van slagroom.

Verwarm een koekenpan op medium vuur met 4 eetlepels olijfolie en bak de kikkererwten en kurkuma goudbruin voor ongeveer 3 minuten. Breng op smaak met zout en peper.

Voeg de babyboerenkool toe aan de pan en bak nog eens 2 minuten.

Schep de boerenkool over 2 borden en lepel de dressing er overheen. Bestrooi met de croutons en de geraspte Parmezaan.

 

 

 

 

 


Apple sauce

This is great to use with fatty meats such as pork and duck or in desserts. Try and get Bramley apples to make it. They're incredibly tart which works well flavour-wise and they break down to a beautiful thick puree.

Ingredients
5 Bramley apples
50g butter
75g demerara sugar
dash of water
lemon juice to taste
2 pinches cinnamon

Method

Peel, core and slice the apples.

Melt the butter in a pan over medium-low heat. Add the apples, sugar and water and cook gently until the apples are soft and pureed.

Stir in the cinnamon and lemon juice, then transfer to a sterilised jar. Allow to cool before serving.


Roasted tomato soup

The ultimate recipe for tomato soup. You won't buy it from a can ever again!

serves 4

Ingredients
1,5 kg ripe plum tomatoes
3 cloves garlic, peeled
2 sprigs thyme
2 bay leaves
2 onions, finely sliced
vegetable stock, about 750ml (we use an organic vegetable cube)
olive oil
salt and pepper

Method
Preheat the oven to 220C. Rinse the tomatoes and cut them in half. Place in a roasting dish together with the garlic, thyme and bay leaves. Drizzle generously with olive oil and season well with salt and pepper. Roast in the oven for about 30 minutes until the tomatoes are well roasted and they have released their juices.

Heat a large pan with a good glug of olive oil over medium heat. Add the onions and sweat until soft for 7-10 minutes. Add the roasted tomatoes with their juices and vegetable stock to cover. Bring to the boil and simmer gently for about 15 minutes.

Blend the soup in a blender or with a stick blender until smooth. Season, if needed with salt and pepper. Reheat the soup and serve as is or with creme fraiche and basil.


Preserved Lemons

Preserved lemons are easy to make. They are used a lot in Middle Eastern and North African cooking to add a citrusy boost to dishes. 

Ingredients

4-6 lemons, washed per jar
1 tablespoon salt per lemon
1-2 bay leaves per jar

Method
Sterilise a couple of jars (whatever size you have).

Cut the lemons lengthways into quarters keeping the stalk end on.

Mix them with 1 tablespoon salt per lemon and stuff them into the jars as tightly as you can, add 1-2 bay leaves per jar. Gradually over the course of a few days, liquid will be released from the lemons. The liquid should cover the lemons completely.

At the end of that time they should be refrigerated. The lemons will last for a year if you make sure you use a clean spoon whenever you remove any from the jar. To use, discard the flesh of the lemons and use the rind.

 


Sauerkraut

It's easier than you think to make your own sauerkraut. Have your own supply right through the cold months.

Here's the recipe:

Ingredients
1,2 kg finely shredded white cabbage
1 teaspoon caraway seeds
5 teaspoons fine salt

Method
Place the finely shredded cabbage in a large bowl together with the caraway and salt. Using your hands, knead and squeeze the cabbage for about 10 minutes until the appearance and texture change and water begins seeping from the cabbage.

Place in a jar or container, weight it down and cover with a muslin cloth. Allow to ferment for at least 5 days. This will be a very young sauerkraut. Ferment up to 2 weeks until you have reached your desired strength of flavour.

Place into sterilised jars, cover with a lid and keep in the fridge for up to 6 months.

Bulgur Salad with Roasted Carrot and Tenderstem Broccoli

Enjoy a relaxed Sunday and end it with a healthy and exciting salad, sipping a glass of wine and watching the sun slowly dip into the horizon.

serves 2

Ingredients
200g bulgur wheat
2 carrots
300g tenderstem broccoli
1 bunch mint
75g pecan nuts
1 lime
5 tablespoons pomegranate syrup
4 tablespoons olive oil
salt and pepper

Method
Preheat an oven to 200°C. Bring a pan of salted water to the boil. Peel the carrot and finely slice diagonally. Cut the hard stalk ends off the broccoli.

Place the carrot and broccoli, 3 tablespoons olive oil, salt and pepper in a roasting dish and roast in the oven for about 15 minutes.

Place the bulgur in the pan of boiling water and simmer until cooked, about 10-12 minutes. Drain off the water from the bulgur.

Heat a frying pan over medium heat with 1 tablespoon olive oil and roast the pecan nuts until golden. Pick the mint leaves and finely slice into thin strips.

Roughly chop the pecan nuts. Mix the roasted vegetables with half the mint and lime juice to taste. Season with salt and pepper. Spoon the salad on to a plate, sprinkle over the remaining mint and pecan nuts and drizzle the pomegranate syrup over.

Ingrediënten
200gr bulgur
2 wortelen
300gr bimi
1 bosje munt
75 gr pecannoten
1 limoen
5 eetlepels granaatappelsiroop
4 eetlepels o lijfolie
zouten peper

Bereiding
Warm de oven voor op 200 C. Breng een pannetje water met zout aan de kook. Schil de wortel en snijd in dunne schuine plakjes. Snijd de harde uiteinden van de bimi af.

Doe de wortel samen met de bimi, 3 eetlepels olijfolie, zout en peper in een ovenschaaltje, rooster in de oven voor 15 minuten.

Doe de bulgur in het pannetje met kokend water en kook gaar in ongeveer 10-12 minuten. Giet water af van de bulgur af.

Verwarm een koekenpan op medium vuur met 1 eetlepel olijfolie, rooster hierin de pecannoten goudbruin. Pluk de blaadjes van de munt en hak fijn in dunne reepjes.

Hak de pecannoten grof. Meng de geroosterde groenten door de bulgur met de helft van de munt en sap van limoen naar smaak, zout en peper. Schep de salade op het bord, bestrooi met de resterende munt en pecannoten, drizzel er granaatappelsiroop overheen.


Stuffed Tomatoes

Tomatoes are incredibly versatile and are at the best towards the end of summer when they have had time to absorb the sun's rays and become beautifully ripe and flavourful.

Ingredients
4 beef steak tomatoes
1 shallot
1 clove garlic
20g panko
3 sprigs thyme
1 small bunch chives
400g minced veal
1 small bunch flat leaf parsley
50g grated Parmesan
4 tablespoons olive oil
salt and pepper

Method
Preheat an oven to 210°C. Finely chop the shallot and garlic. Heat a frying pan with 1 tablespoon olive oil and sweat the shallot for 2 minutes. Add the garlic and fry for a further 1 minute.

Slice off the top of the tomatoes (this is the lid) and set aside. Scoop out the flesh and finely chop.

Finely chop the chives and parsley. Pick the thyme leaves from the stalks. In a bowl mix the shallot, garlic, panko, thyme and half the chives and parsley with the minced veal and season with salt and pepper. Fill the tomatoes with the meat mixture.

Place the chopped tomato flesh in a roasting dish and place the tomatoes on top. Replace the lids on the already stuffed tomatoes and bake in the oven for 20 – 30 minutes.

Remove the tomatoes from the oven and sprinkle over the grated Parmesan, parsley and chives and serve.

4 coeur de boeuf tomaten
1 sjalotje
1 teentje knoflook
20gr panko
3 takjes tijm
1 bosje bieslook
400gr kalfsgehakt
1 bosje bladpeterselie
50gr geraspte Parmezaan
4 eetlepels olijfolie
zout en peper

Bereiding
Verwarm de oven voor op 210 C. Snijd knoflookteentje en sjalotje fijn. Verwarm een koekenpannetje met 1 eetlepel olijfolie en smoor hierin het sjalotje 2 minuten en voeg dan knoflook toe voor nog eens 1 minuut.

Snijd het kapje van de tomaten af en zet opzij. Haal het vruchtvlees uit de tomaten en hak het fijn.

Hak de bieslook en peterselie fijn. Pluk de blaadjes van de takjes tijm.  Meng de sjalot, knoflook, panko, tijm, de ½ van de bieslook en peterselie door het gehakt in een kom. Breng op smaak met zout en peper.

Doe het vruchtvlees in de ovenschaal en zet de tomaten er bovenop. Zet de deksels van de tomaten op de gevulde tomaten en zet de schaal in de oven voor 20-30 minuten.

Haal de tomaten uit de oven en rasp er Parmezaan overheen. Verdeel ze over 2 borden.


Spinach and Feta Strudel

A strudel is often associated with the famous apple strudel. Here is a savoury version made with the classic Greek flavours of spinach and feta. Ideal for lunch on a warm day.

Serves 2

Ingredients
1 roll filo pastry
50g butter
500g spinach
250g ricotta
2 eggs
25g grated Parmesan
1 small bunch mint
75g feta
2 tablespoons olive oil
salt and pepper

Method
Preheat the oven to 180° C. Heat a frying pan over medium heat with 2 tablespoons olive oil. Add the spinach and cook until wilted. Season with salt and pepper and drain well in a colander, pressing as much of the moisture out as you can.

Finely chop the spinach and the mint, add to a bowl with the ricotta, eggs, Parmesan, salt and pepper. Mix the ingredients well and crumble ¾ of the feta through the mixture.

Melt the butter in a small pan (this can also be done in a microwave). Brush 6 sheets of filo pastry with the melted butter, laying each sheet on top of the other.

Spoon the filling in the centre of the filo pastry. Fold the ends towards the centre to form a closed package.

Lay the strudel on a baking tray and bake in the oven for 25-30 minutes.

Remove the strudel from the oven, cut on the diagonal and serve sprinkled with the remaining feta.

1 rol filodeeg
50g boter
500g spinazie
250g ricotta
2 eieren
25g geraspte Parmezaan
1 bosje munt
75g feta
2 eetlepels olijfolie
zout en peper

Bereiding
Verwarm de oven voor op 180° C. Verwarm een koekenpan op medium vuur met 2 eetlepels olijfolie. Voeg de spinazie toe en bak totdat het geslonken is. Breng op smaak met zout en peper. Doe de spinazie in een vergiet en druk er zoveel mogelijk water uit.

Hak de spinazie  en munt fijn, doe het in een kom met de ricotta, eieren, Parmezaan, zout en peper. Meng alle ingrediënten goed door elkaar. Kruimel ¾ van de feta er doorheen.

Smelt de boter in een pannetje (dit kan ook in de magnetron gedaan worden). Bestrijk 6 filodeeg vellen met de boter en leg ze op elkaar.

Leg de vulling in het midden van de deeg. Vouw de zijkanten naar binnen, zodat het een dicht pakketje wordt.

Leg de rol op een bakplaat en bak 25-30 minuten.

Haal de strudel uit de oven, snijd schuin in stukken, kruimel het resterend stukje feta er overheen.
