Wild garlic pesto
Ingredients

1 large handful wild garlic

30 g Parmesan cheese

20 g pine nuts (or walnuts/almonds)

80–100 ml olive oil

zest of ½ lemon
-
salt
Method
-
Lightly toast the pine nuts.

Blend or roughly chop all ingredients.

Add olive oil until smooth but still slightly textured.
-
Season with lemon zest and salt.
Use

With pasta
-
On burrata
-
With fish or chicken
-
Stirred into soups or potatoes

Wild Garlic Butter
Ingredients

100 g butter, softened
-
1 generous handful wild garlic, finely chopped
-
zest of ½ lemon
-
pinch of salt
-
optional: black pepper
Method

Mix the softened butter until smooth.
-
Stir in the wild garlic and lemon zest.
-
Season with salt and pepper.
-
Shape into a log using cling film or greaseproof paper.
