Domaine des Baumards Brut Carte Turquoise

WINERY NOTES
Domaine des Baumard lies tucked away in the tiny village of Rochefort-sur-Loire, just south of Savennières, in the very heart of the ancient Duchy of Anjou. This property is an impeccably run estate that has been fashioning outstanding Loire Valley wines since 1634. The historical Baumards are viticulturists who specialize in two grape varietals, the great but now nearly forgotten Chenin Blanc variety, and Cabernet Franc, the Loire Valley's premier red grape. Under the recent guardianship of Jean and Florent Baumard, Domaine des Baumard has soared to new heights, even as many of Baumard's neighbors have struggled to maintain their marginal vineyards. Although Domaine des Baumard has played a key role in producing great Loire Valley wines for centuries, much of the modern-day lore can be attributed to Jean Baumard, Florent's father, who resurrected this family property in the 1950s and 1960s after decades of decline due to phyloxerra, economic depression, and the ever-shifting tastes of the wine-drinking public. For decades, the Baumards, like many of their neighbors, were forced to concentrate their efforts on their nursery business and the cultivation of vines rather than winemaking. That is, until the 1950s, when Jean began acquiring several of the greatest vineyards in Côteaux-du-Layon and Quarts de Chaume and refocused the family's effort into the crafting of the greatest of all Loire Valley wines. Presently, Domaine des Baumard has one of the most extensive portfolios of Anjou wines, including outstanding dry Savennières offerings, sweet treasures from Côteaux-du-Layon and Quarts de Chaume, a beautiful, highly perfumed Cabernet Franc, and at least three of the Loire Valley's most enjoyable sparkling wines, which includes Carte Turquoise. There are also a number of limited productions from single vineyards. All of Baumard's wines are hand harvested, and each of the estate's wines is made in small, individual lots.

TASTING NOTES
Fresh as a spring garden and as delicate as a blossom in the afternoon breeze, Baumard's Carte Turquoise Crémant de Loire captures the essence of sparkling wine from France's fabled Loire Valley. As a fine Crémant de Loire and a proper Baumard Chenin Blanc, the Carte Turquoise exhibits a persistent, tiny bead; at the same time, it radiates from the glass a golden glow as if kissed by the summer sun. More importantly, this méthode traditionnelle Chenin Blanc offers delicate, sophisticated aromatics and plenty of soft, elegant flavors to beguile all the senses. Apple and cherry blossoms, fresh baked bread, and the fecundity of spring all come to fore in this wine. A myriad of flavors gently caress the mid plate and finish obligingly clean and perfectly dry. If there were enough of the balanced, lovely, supremely elegant Carte Turquoise to go around, it would be a staple at weddings and parties. No acid reflux or toxic burn from this sparkling wine. So, to begin the festivities, we suggest putting a good chill on this huggable sparkler (about 6-10° C). However, we prefer that it warm slowly in the glass to reveal its subtle charms and the great Anjou terroir from whence it comes.

ACCOMPANIMENTS
Much of the beauty of Loire Valley crémant is its gentleness and versatility and Baumard's Carte Turquoise Crémant de Loire excels on both counts. Consequently, it pairs well with a wide array of hors d'oeuvres and canapés, and it can even hold its own with smoked salmon, replete with capers and onions. It provides an excellent complement to fish, especially lightly grilled or sautéed perch and trout. In addition, it serves as a charming aperitif. Ordinarily, we prefer to consume Champagne and sparkling wines, the Baumard Carte Turquoise included, at the beginning of the evening's festivities. However, for those among us who still insist upon saving the bubbly for after dinner, fear not. Carte Turquoise has a natural affinity for fruit and cheese. Together, they make for a splendid way to finish a meal. Port Salut and other cow's milk cheeses shine with this elegant sparkling wine. Moreover, the gentleness of this wine makes it easy to consume after a substantial meal.

Artadi Tempranillo 12 Meses

100% Tempranillo

Region
Bodegas y Viñedos Artadi produce quality wines in three wine regions: Rioja Alavesa, Navarra and Alicante. To get the most from the different soil types, climatic conditions and characteristic grape varieties, they employ organic and biodynamic farming. In the Basque part of the Rioja, Alavesa, Artadi grows only tempranillo for the red wine. The bottom of the 83 hectares of vineyards mainly consists of calcareous soil, gravel and clay, at an altitude of about 700 meters above sea level. The climate is a whimsical combination of Oceanic and continental.

Vinification (wine-making)
Tempranillo grapes are used from vines that have an age averaging about 20 years old. After careful manual harvesting, the fruit gets a cold soaking of 24 to 48 hours followed by fermentation in stainless steel vats in which twice daily ' pigeage ' takes place (dipping the skins in the wine for more colour, smell and flavour extraction) and a slight remontage maceration (grape juice from the bottom of the tank is pumped again through the wine). This takes 10 to 12 days to complete. Maturation in wood takes 12 months, where only French oak used.

Taste impression
Intense, bright cherry-red colour. On the nose, lots of red fruit and black currant, roasted balsamic nuances, exotic wood and a hint of liquorice. Fresh in the starter, well structured and balanced, a full red wine with fine and elegant tannins and a catchy, lingering flavour.

Serving
Serve between 17 - 18 ° C. Decant the wine to separate the sediment and give it some aeration. Do this 30 minutes before serving to improve the wine's aroma. For serving, you can also use wide, large glass and pouring in only a little wine.Ageing potential: drink within 4 to 6 years after the harvest. Store in a cool and dark place.

Culinary advice
A good companion to richly flavoured Mediterranean dishes, particularly stews with meat or poultry, roasted or grilled lamb or pork, poultry, and mature, hard Spanish cheeses.

Cotes du Rhone blanc Les Travers - White Wine

Soft, elegant, aromatic. A real winter wine.

30% Clairette, 20% Roussanne, 30% Grenache Blanche, Marsanne and Viognier (may vary per vintage year)
Vineyard
Les Travers includes several lots on the hills of Cairanne and on the flat Plan de Dieu. For this white Les Travers the grapes are harvested in vineyards with a bottom of clay and limestone on the flanks of the 'coteaux' and alluvial sand in the Valley. The average age of the vines is more than 30 years.
Vinification
The grapes are 100% hand-picked and carefully selected in the vineyard. Upon arrival in the wine cellars, they are immediately pressed and pneumatically cooled for the must to settle. 80% of the fermentation takes place in stainless steel tanks at 18 ° C and 20% in new oak barrels, with regular bâtonnage. To maintain the necessary freshness in the wine is typically a malolactic fermentation not desired.
Taste/nose
Very bright and sparkling colour, yellow with a green tang. In the nose, floral aromas dominate, complemented by nuances of exotic fruits, pear, melon and tangerine with a hint of vanilla. Notes of almond paste and honey are not far away. Spicy, fruity and round in the beginning, dry and smooth on the tongue, beefy and greasy in the beautiful long finish.
Serve with
In the Rhône Valley this organic wine is often served with oysters and other shellfish. Classically combined with sea fish, poultry or white meat. Particularly good with poultry paté or terrine.

Palmer & Co. Brut Reserve - Champagne

Champagne Palmer has evolved considerably over the past half century from its roots in Avize. It is now one of the most succesful Co-operative houses, based in the centre of Reims. With over 300 hectares of vines, 180 of which are rated Grands Crus, they have an enviable array of quality Chardonnay (50%) & Pinot Noir (40%) with which to blend their beautiful wines. The Blancs de Blancs exemplifies the overall quality of this Domaine.

The Brut Reserve of Champagne Palmer is made up of about of 50% Chardonnay, 40% Pinot Noir and 10% Pinot Meunier.
The taste of the Brut Cuvée depends not only on grape varieties coming from 40 different crus; they also result from the wine making and the ages of the wines which compose the cuvée. The grape harvest provides the main note, and is embellished by the addition of Reserve Wines which give a rare fullness and maturity.

To the eye, it offers a beautiful and bright straw-yellow colour; the bubbles are abundant and persistent. On the nose, the aromas are clear and cut; they develop a rich and wide aromatic palette, aromas of white fruits (pear), apple (cooked), freshly picked fruits (apricot), with subtle notes of honey, fresh coffee, dried fruits (roasted hazelnuts, dried currants) and a discreet buttered touch evoking croissants and pastries.

On the palate, this champagne is ample, round and fleshy; it offers the same intense sensations of fruit already present on the nose evolving towards in a more ‘compoté’ note. The finish is long lasting, harmonious and structured, ending with a beautiful freshness.

Barbera d’Asti - La Vigna Vecchia - Red Wine

Origin:
The Cossetti family have been active in this wine region since 1891. Respecting tradition, but utilising new technology in considered doses, they have been producing distinctive wines here for many generations. In this part of Piemonte the soil is a mixture of clay and lime, perfect for sweet wines, white or ... red.

Preparation:
The grapes are harvested in the historic vineyard of this domain near Castelnuovo Belbo. The vines are more than 40 years old and provide a modest yield with a high fruit quality. Fermentation takes place in temperature controlled vats. By keeping the temperature low, the the characteristic properties of the Barbera grape are maintained. Maturation takes a minimum of 1 year and takes place in large oak casks with a capacity of 5000 liters. A part of the wine matures in barriques (barrels of 225 liters) that are used for one year. The wood influence remains controlled and gives the wine just that little extra complexity. After maturing the wines are assembled. In this way the beautiful characteristics in the wine come to the fore where the fruit plays a predominant role supported by the wood flavours. Large drums are used to aerate the wines very lightly and the wood has hardly any role to play.

Taste impression:
Red colour with purple impressions, a long intense aroma of red and black cherries with a gentle spiciness. The rich full flavour remains elegant with the characteristic Barbera freshness. Serve at 18 ° C.

Culinary advice:
Goes well with traditional appetizers, various white and red meat and medium-ripened semi-hard cheeses.

Pepin Condé Cabernet Sauvignon - Red Wine

Origin:
Stark-Condé Wines is a family business that produces high-quality artisan wines in Stellenbosch, South Africa. American born and raised José Condé earned his stripes working in the art and design world for 15 years. In 1997, he moved with his wife and two daughters to South Africa, where, together with his father-in-law Hans Schroder (owner of Neil Elis Wines), founded in Stark-Condé Wines in 1998. The name of the company is a combination of the surnames of co-owner and winemaker José Condé and of his wife. Pepin Condé is a trademark of Stark-Condé. The name is derived from the local wine maker's childhood pet name: (José) Pepin Condé...
The brand stands for high-quality wines made from specific vineyards outside the usual wine region of the Stark-Condé wines. These specially selected vineyards all produce top quality grapes with their own character. For this wine, mainly cabernet sauvignon and merlot grapes from a well known vineyard on the Bottelary Hills in Stellenbosch are used, supplemented with grapes from Helderberg and Jonkershoek Valley. The average height of the vineyards is 250 m and the average age of the vines is around 15 years.

Production:
This wine is classicly vinified. The destalked and crushed grapes are fermented in stainless steel tanks and pumped 3 times daily so that the juices come into contact with oxygen. After the alcoholic fermentation, the grape must is compressed and transferred back into the stainless steel tanks where it undergoes the malolactic fermentation. Part of the wine fermentation takes place in oak barrels. The assembled wine is matured for 12 months partly in French and partly in American oak barrels. Before bottling, the wine is lightly filtered.

Taste impression:
Typical classic 'Stellenbosch' Cabernet wine, intensely aromatic, plenty of ripe dark fruit, powerful, fleshy and full, with prominent tannins and a very pleasant 'spicy touch'. Serve at: 15-17 ° C. Ageing potential: a few years after the harvest at best.

Culinary advice:
Ideal accompaniment to meat dishes with a powerful, rich flavour: beef, game, lamb, grilled meat, from the braai or barbecue, roasted in the oven or the rotissoire, or in stews... Also delicious with ripe, hard farmhouse cheeses.

Iphöfer Kronsberg Scheurebe - Kabinett Trocken - white wine

Chefs Notes:
We drank this wine with Thai Style Mussels. The combination of spiciness and coconut milk brought a lovely acidity and the chilli heat brought out the light sparkle and liveliness in the wine.

Origin:
Hans Wirsching winery is one of the best in Franken and certainly one of the better in Germany. There are two major key points to the area: Silvaner grape (almost 40% of plantations) and the bocksbeutel, the classic bottle of Franconia, in the characteristic shape of a buck's scrotum. The bottle is transparent for the modern, fruity wines but green, blue, brown or even black for the classic Franken wines. Besides Silvaner grapes, Riesling, Müller-Thurgau (Riesling x madeleine royale), Scheurebe, Pinot Bianco, Pinot Noir and Dornfelder are also grown. The spitzlachen of Wirsching  are located near the towns of Iphofen: Julius-Echter-Berg, Hannover and Kalb. The soil of the vineyard consists of many different of layers: Keuper gypsum, limestone, ancient sediments (from the time when large parts of Europe where below sea level), variegated sandstone, muschelkalk stone, Jura limestone and Keuper sandstone, slate, weathered stone the form of rock containing clay ... and all laced with minerals. The combination of these different soil types and microclimates provides a fascinating variety of wine styles and flavours , from elegant fruitiness to powerful minerality. The steep vineyard Iphöfer Hannover is famous for both the dark-coloured, very mineral rich Keuper soil and microclimate that allows for a very long growing season. This gives this Scheurebe wine a very personal, incomparable character, full of minerality, exotic fruit and elegance.

Taste impression:
Beautifully clear and sparkling golden-yellow. An explosive nose with aromas of grapefruit, mango, passion fruit, cassis, mint and lemon balm. Mouth-filling, big, sweet, lively and mild flavour. To serve: 10-12 ° C.

Culinary advice:
Classicly served with appetizers, especially with game terrines. Surprisingly good combined with savoury 'dim sum' and other Oriental appetizers. Beautiful with fish!

Centanni - Il Borgo - White wine

Origin:
The family business Centanni was founded in 2008 and is located in one of the cultural  and wine producing centers of the Marches (Marche): Montefiore dell'Aso, Ascoli Piceno. The family has always been very attached to the beautiful country, to the rhythm of the seasons and to the beauty that this region produces. Their company, the Azienda Agricola Centanni, therefore, is a daring project that connects a respectful, sustainable and organic viticulture from traditional, indigenous grape varieties with innovative techniques and artistic design. Centanni is the first winery in Marche that closes its wines with a glass stopper (Vinolok) as a guarantee of a clean, fresh and cork-free wine.

Preparation:
The perfectly ripe grapes are picked and brought straight to the wine cellars, ensuring that contact with oxygen is kept as low as possible. Fermentation takes place for 20 days at 10 ° C. The young wine is aged for five months in stainless steel tanks and then bottled.

Taste impression:
Straw-yellow colour. Very aromatic. Fresh, soft and delicate taste, good structure and a lively acidity.

Featured wine: Enate - Tempranillo Joven - red wine

Origin:
Enate is located in the village of Salas Bajas, in Somontano. despite the relatively young age of this winery, founded in 1991, is already one of the most prestigious wineries in Spain. The purpose of Enate is to produce high-quality and premium wines from the best grapes of Somontano, with respect for the ancient local traditions and using the latest technology. The D.O. Somontano Located in the northeast of Spain, in the province of Huesca. It is also a fairly recent D.O. (1984), but also one of the most dynamic and respected in Spain. The vineyards for this hip tinto are 550-600 meters above sea level, protected through the Pyrenees. The humidity is low, partly due to the drying effect of soft winds. The soil consists of a mixture of sand and clay, poor and water permeable.
