Kale Smoothie

If you're needing a boost for your immune system or just looking to keep healthy, the combination of theses fruits and vegetables will help you on your way.

Serves 2

Ingredients
100 g shredded kale
3 carrots, peeled and chopped
1 piece fresh ginger (about 5 cm), peeled and chopped
1 apple, peeled and cored
juice of 1 orange
apple juice, to thin the smoothie down

Method
Place all the ingredients in a (Magimix) blender and blend until smooth. Add enough apple juice to thin it down to the consistency you desire.

Pour into tall glasses and serve immediately.

The Perfect Cheese Omelette

A prefect omelette is easy to achieve and makes for a perfect lunch or light meal. Here's our way to do it.

Serves 2

Ingredients
6 free range or organic eggs
salt and pepper
about 50 g goats or truffle cheese, grated
butter
bread, to serve
salad, to serve

Method

Crack the eggs into a bowl and whisk to combine. Season with salt and pepper. Heat a good non-stick frying pan over medium heat with a knob of butter.

Once the butter begins to foam, pour in the beaten eggs. As the egg begins to set on the base, pull it from the outer part to the center with a spatula. That way you ensure that the omelette will be light, blonde in colour and still be soft (or baveuse) in the centre. Now is the time to add the grated cheese, leaving some back to sprinkle over at the end. Reduce the heat at this point if you feel it's cooking too fast.

With the spatula, fold over a small section of the omelette, tilting the pan as you do, so that the omelette folds over itself, becoming neat and folded in the corner of the pan. Grab your serving plate in one hand and the frying pan in the other and carefully, but with confidence, turn the omelette on to the plate. Sprinkle with the remaining cheese and serve with salad of your choice dressed with a little olive oil and some delicious bread.

Egg en cocotte

Serves 2

Ingredients
50 g samphire
knob of butter
125 ml crème fraiche
50 g grated Parmesan
2 free range organic eggs
2 thick slices white or whole meal bread
salt and pepper

Method
Preheat the oven to 180 °C. Place the roasting tray in the oven and half fill with hot water. Bring a small pan of water to the boil and cook the samphire for 1 minute. Drain off the water and leave in the colander.

Grease 2 ramekins or oven-proof cups with butter and divide the samphire between them.

Beat the crème fraiche to loosen and season with salt and pepper. Spoon into the ramekins, grind over some pepper and sprinkle over half the cheese.

Press lightly with the back of a spoon to create a ‘crater’ and carefully break in the eggs, ensuring the yolk stays intact. Sprinkle over the remaining cheese.

Place the ramekins in the roasting tray filled with hot water and cook 8-10 minutes for soft cooked or 20 minutes for hard cooked.

Toast the white or whole wheat bread until golden brown and cut into ‘soldiers’ (strips). Serve the eggs cocotte with the toast soldiers.

Smashed avocado and baked egg

Ingredients
4 slices bread of your choice
2 haas avocados
2 eggs
olive oil
salt and pepper
sprinkling of ground cumin

Method
Halve the avocados, remove the stones and scoop out the flesh. Coarsely mash in a bowl with fork and season with salt and pepper. If you wish, you can add a few drops of lemon juice.

Toast the bread until golden and crispy. Heat a non-stick frying pan with a splash of olive oil. Fry the eggs until cooked to your liking (we prefer sunny side up with a soft yolk). Season with a little salt and pepper.

Spread the mashed avocado on the toast and top with the fried egg. Sprinkle with a touch of ground cumin, before serving.

Challah French Toast

Challah is an enriched braided bread eaten by many cultures, most significantly associated with the Jewish Sabbath.

Ingredients
4 thick slices challah, crusts removed
2 eggs
200 ml milk
small splash vanilla extract
castor sugar, to taste
knob of butter
selection of red fruits and berries
maple syrup and icing sugar, to serve

Method
In a bowl, whisk the eggs, milk, vanilla extract and sugar (about 1 tablespoon), to taste.

Heat a non-stick frying pan with a knob of butter. While the pan and butter are heating up, soak the challah slices briefly in the eggy mixture. Fry them over a medium heat until golden on both sides.

Transfer to serving plates. Drizzle the french toast with maple syrup. Spoon over a selection of berries and red fruits and finish with a light dusting of icing sugar.

Scrambled Eggs

There's no better way to start off your day than with plate of creamy silken scrambled eggs. You'll find many recipes but our method for the perfect scrambled eggs will never let you down.

Ingredients
3 organic or free range eggs per person
a knob of butter
a splash of cream
salt and pepper

Method
Crack the eggs into a bowl and whisk lightly with a fork until they are well combined. In the meantime, heat a non-stick frying pan with a knob of butter over a medium-low heat. Season the eggs with salt and a touch of pepper.

Once the butter has melted as is frothy, add the eggs. It's important now to mix them too much. Using a wooden or rubber spatula, stir the eggs very gently until they begin to set edges. Cook the eggs the way you like to eat them, but we prefer what we call baveuse, which means still soft and runny.

When it reaches this, we turn off the heat, and add a little splash of cream. This stops the cooks process and and enriches the eggs. Serve as is, with toast or delicious accompanied with smoked salmon and freshly chopped chives.
