Conchiglie Pasta with Pumpkin and Mozzarella Butter

Conchiglie means 'shell' or 'seashell' and this shell shaped is wonderful to use with rich, creamy sauces or to fill and bake in your favourite sauce. This recipe which includes pumpkin and mozzarella is a new and slightly unusual way of using one of Italy's favourite cheeses.

Serves 2

Ingredients
600g butternut squash
1 ball buffalo mozzarella
1 small bunch sage
1 clove garlic
200g conchiglie pasta
1 lemon
50g grated Parmesan
3 tablespoons olive oil
20g butter
salt and pepper

Method
Preheat an oven to 200˚C. Peel the butternut squash, remove the seeds and cut into 2 cm cubes. Place in a roasting dish with 2 tablespoons olive oil, salt and pepper and roast for about 20 minutes.

Finely chop the garlic cove and pick the sage leaves. Cut the mozzarella into small cubes and ensure the butter is at room temperature. Grate the zest from the lemon. Bring a pan of salted water to the boil.

Heat a small pan over medium heat with 1 tablespoon olive oil and fry the garlic and sage leaves for 2 minutes. Allow to cool slightly. Keep a few sage leaves back to finish the dish off and place the garlic, remaining sage, butter, mozzarella, lemon zest and juice in a jug or food processor and blend. Season with salt and pepper.

Cook the pasta for about 9 minutes. Keep a cup of the pasta cooking liquid and drain off the pasta, returning it to the pan. Mix the mozzarella butter through the pasta along with the pumpkin and half the Parmesan. Season with salt and pepper and add some of the pasta cooking water if necessary.

Divide the pasta between 2 plates. Sprinkle over the remaining Parmesan and sage leaves. Serve straight away.

Ingrediënten
600gr flespompoen
1 bol buffel mozzarella

1 teentje knoflook
200gr conchiglie
1 citroen

3 eetlepels olijfolie

Bereiding
Verwarm een oven voor op 200˚C. Schil de flespompoen, verwijder de zaadjes en snijd 1 blokjes van 2 cm. Doe ze in een ovenschaal met 2 eetlepels olijfolie, zout en peper en rooster ongeveer 25 minuten.

Snijd de knoflook fijn en pluk de salieblaadjes. Snijd de mozzarella in kleine stukjes en zorg dat de boter op kamertemperatuur is. Rasp de schil van de citroen. Breng een pan met water en zout aan de kook.

Verwarm een pannetje op medium vuur met 1 eetlepel olijfolie en bak de knoflook en salieblaadjes 2 minuten. Laat even afkoelen. Bewaar een paar salie blaadjes en doe knoflook, resterende salie, boter, mozzarella, citroenrasp en sap naar smaak in een beker of keukenmachine en blend. Breng op smaak met zout en peper. Doe in een kom en zet in de koeling.

Kook de pasta ongeveer 8 minuten in de gezouten water. Bewaar 1 kopje van de kookvocht en giet af. Doe de pasta terug in de pan. Meng de mozzarellaboter door de pasta met de pompoen en de helft van de Parmezaan. Breng op smaak met zout en peper en voeg wat van het kookvocht toe, indien nodig.

Verdeel de pasta over 2 borden. Bestrooi met de resterende Parmezaan en salieblaadjes en serveer.


Mushroom ‘Stamppot’ with Watercress and Mature Cheese

Europe prides itself on having created the best recipes wit potatoes. They're a humble vegetable, incredibly versatile and cheap. Mash in any form is in our opinion one of the best food there is. Here is a traditional Dutch 'Stamppot' which has been given a modern twist.

Serves 2

Ingredients
1kg floury potatoes
300gr mixed wild mushrooms
100g piece mature aged cheese
1 bunch watercress
2 cloves garlic
1 small bunch chervil
2 tablespoons olive oil
splash of milk
50g butter
salt and pepper

Method
Finely chop the garlic cloves. Peel the potatoes and place in a pan of cold water with salt. Bring to the boil and cook for 15 minutes until soft.

Clean the mushrooms and cut the cheese into cubes. Heat a frying with 2 tablespoons olive oil. Fry the mushrooms over high heat. Add the garlic and fry for a further 1 minute over a medium heat.

Drain the water from the potatoes and mash until smooth with a splash of milk and 50g butter. Keep the mash warm.

Add the cheese cubes to the potato and stir until they melt. Remove the stalks from the watercress and roughly chop the leaves. Mix through the potato, warming through gently. Season with salt and pepper.

Pick the chervil leaves. Divide the ‘stamppot’ between 2 plates and top with the wild mushrooms. Scatter over the chervil leaves and serve.

Ingrediënten
1kg kruimige aardappelen
300gr gemengde wilde paddenstoelen
100gr belegen boerenkaas
1 bos waterkers
2 teentjes knoflook
1 klein bosje kervel
50gr boter
2 eetlepels olijfolie
scheutje melk
zout en peper

Bereiding
Snijd knoflookteentje fijn. Schil de aardappelen en doe ze in een pannetje met koud water en zout. Breng ze aan de kook en kook in 15 minuten gaar.

Maak de paddenstoelen schoon. Snijd de kaas in kleine blokjes.

Verwarm een koekenpan met 2 eetlepels olijfolie. Bak de paddenstoelen op hoog vuur goudbruin en voeg dan knoflook toe en bak 1 minuut op middelmatig vuur mee.

Giet het water van de aardappelen af en stamp de aardappelen met wat melk en een klontje boter tot een smeuige puree, houd warm.

Voeg kaasblokjes toe en verwarm tot kaas gesmolten is. Snijd steeltjes van de waterkers af, snijd de waterkers grof en meng het door de puree, verwarm licht. Breng op smaak met zout en peper.

Pluk de kervel. Verdeel de stamppot over 2 borden en leg de padddenstoelen er bovenop. Bestrooi met de geplukte kervel en serveer.

 


Brussels Sprouts and Lemon Risotto

Brussels Sprouts are an incredibly versatile vegetable. These 'mini cabbages' lend themselves to a variety of cooking methods and dishes. Here we have incorporated them into a risotto with a zing of lemon.

Serves 2

Ingredients
200g risotto rice
1 shallot
500g Brussels sprouts
1 lemon
1 small bunch flat leaf parsley
75g grated Parmesan
1 organic vegetable stock cube
6 tablespoons olive oil
salt and pepper

Method
Preheat an oven to 200° C. Finely chop the shallot and halve the sprouts if they’re large, otherwise, leave them whole. Grate the zest of the lemon and finely chop the parsley. Dissolve the stock cube in 800 ml hot water and keep warm in a pot.

Heat a frying pan over medium heat with 3 tablespoons olive oil and fry the sprouts for about 5 minutes until golden brown. Season with salt and pepper and set aside.

Heat the same frying pan over medium heat with 3 tablespoons olive oil and sweat the shallot for 5 minutes. Add the rice and stock to the pan. Bring to the boil and transfer to a roasting dish. Cover with aluminium foil and place in the oven for 30-35 minutes.

Halfway through the cooking time, stir half the sprouts through the risotto. Cover with the foil and return to the oven for about 15 minutes.

Reheat the remaining sprouts. When the risotto is cooked, season with salt and pepper. Add lemon zest, lemon juice to taste, the parsley and half the Parmesan and stir through.

Spoon the risotto into 2 bowls and sprinkle the remaining Parmesan and sprouts over. Serve straight away.

Please note that oven temperatures and dish sizes can vary. This may influence the cooking time.

Ingrediënten
200gr risotto rijst
1 sjalot
500gr  spruitjes
1 citroen
1 klein bosje bladpeterselie
75gr geraspte Parmezaan
1 biologisch groentebouillon blokje
6 eetlepels olijfolie
zout en peper

Bereiding
Verwarm de oven voor op 200° C. Snijd de sjalot fijn en snijd de spruitjes in tweeën als ze groot zijn anders laat ze zoals ze zijn. Rasp de schil van de citroen en hak de peterselie fijn. Los het bouillonblokje op in 800 ml warm water en houd deze warm in een pan.

Verwarm een koekenpan op medium hoog vuur met 3 eetlepels olijfolie en bak de spruitjes goudbruin in ongeveer 5 minuten. Breng op smaak met zout en peper en zet opzij.

Verwarm dezelfde koekenpan op medium vuur met 3 eetlepels olijfolie en smoor de ui zachtjes voor 5 minuten. Voeg de rijst en bouillon toe. Breng aan de kook en doe het risottomengsel in de ovenschaal. Dek af met alufolie en zet de schaal in de oven voor ongeveer 30-35 minuten.

Roer halverwege de kooktijd de 1/2 van de spruitjes door de risotto. Dek weer af en zet terug in de oven voor 15 minuten.

Verwarm de andere helft spruitjes. Als de risotto gaar is breng het dan op smaak met zout en peper. Voeg citroenrasp, citroensap naar smaak, peterselie en de helft van de Parmezaan toe aan de risotto. Warm de resterende spruitjes op.

Lepel de risotto in twee kommen en bestrooi met de resterende Parmezaan en spruitjes. Server direct.


Roasted Pumpkin and Goats Cheese Risotto

A steaming bowl of oozy risotto. Doesn't that just make your mouth water? To this recipe we've added roasted butternut squash and goats cheese. We're sure it'll become a firm favourite in your house.

Serves 2

Ingredients
1 butternut squash
1 organic vegetable stock cube
30g butter
1 onion
1 stick celery
2 garlic cloves
1 bay leaf
4 sprigs fresh thyme
150g risotto rice
50g grated Parmesan
75g goat’s cheese
4 tablespoons olive oil
100ml white wine
salt and pepper

Method
Preheat the oven to 200 °C. Peel the pumpkin and slice in half. Discard the seeds and cut into 2 cm cubes. Mix the pumpkin with 2 tablespoons olive oil in a roasting dish, season with salt and pepper and roast for about 20 minutes. Stir occasionally.

Dissolve the stock cube in a pan with 750 ml hot water. Keep warm over a low heat.

Finely chop the onion, celery and garlic. Heat the remaining 2 tablespoons olive oil and 1 cube butter in a pan. Add the onion and sweat until transparent (about 3 minutes). Add the celery, garlic, bay leaf and thyme leaves. Cook for a further 2 minutes.

Increase the heat slightly and add the rice. Cook, stirring continuously for 3 minutes. Add the wine and reduce until the pan is almost dry. Ladle the stock in, one spoon at a time, until it has been absorbed by the rice. Gently stir the rice every so often.

When the stock has been absorbed, add the next spoonful. Add half the pumpkin. The rice should take 15-17 minutes to cook through. Season with salt and pepper.

Turn off the heat. Add the remaining butter and most of the Parmesan. Cover the pan with a lid and allow to stand for 2 minutes.

Spoon the risotto into 2 bowls. Scatter with the remaining pumpkin and pieces of goat’s cheese.

Serve with good crusty bread or a green salad.

1 biologisch groenten bouillonblokje
30g boter
1 ui
1 stengel bleekselderij
2 teentjes knoflook
1 laurierblad
4 takjes verse tijm
150g risottorijst
50g geraspte parmezaan
75g geitenkaas
4 eetlepels olijfolie
100ml witte wijn
zout en peper

Bereiding
Verwarm de oven voor op 200°C. Schil de flespompoen en snijd deze door de helft. Verwijder de zaadjes en snijd in stukjes van 2 cm. Meng de pompoen met 2 eetlepels olijfolie in een ovenschaal, bestrooi met zout en peper en rooster in de oven voor ongeveer 20 minuten. Roer af en toe om.

Los het bouillonblokje op in een pan met 750 ml warm water, houd tegen de kook aan op het vuur.

Snijd de ui en bleekselderij fijn, hak de knoflook fijn. Verwarm de overgebleven 2 eetlepels olijfolie en de helft van de boter in een pan, voeg de ui toe. Laat deze zachtjes smoren totdat deze glazig zijn (ong. 3 minuten). Voeg de bleekselderij, knoflook, laurier, blaadjes van de tijm toe. Kook nog eens 2 minuten.

Zet het vuur wat hoger en voeg de rijst toe. Roer ongeveer 3 minuten. Voeg de wijn toe en laat inkoken totdat het bijna verdampt is. Voeg de bouillon toe met een soeplepel, een lepel per keer, tot de rijst de bouillon heeft geabsorbeerd. Roer af en toe lichtjes.

Als de bouillon geabsorbeerd is, dan is het tijd voor de volgende lepel. Voeg de helft van de pompoen toe. Dit alles kost ongeveer 15-17 minuten. Breng op smaak met zout en peper.

Zet het gas uit. Voeg de resterende boter en een groot deel van de parmezaan aan de risotto toe. Plaats de deksel erop en laat 2 minuten staan.

Schep de risotto in 2 diepe borden of kommen. Bestrooi met de resterende pompoen en stukjes geitenkaas.

Serveer met lekker brood of groene salade.


Vegetarian Hamburger with Pickled Carrot Slaw

There is nothing more delicious than a good burger! What appears to be something so simple depends on the quality of it's ingredients and it's preparation. Even if you’re craving a  burger, maybe opt for a vegetarian version. There are some really good vegetarian and vegan versions available. Go and choose your favourite and use it in this recipe

Serves 2

Ingredients
2 hamburger buns
2 vegetarian hamburgers of your choice
4 tablespoons mayonnaise
1 tablespoon miso
1 large carrot, about 300g
75g rocket
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 teaspoon sugar
salt and pepper

Method
Peel the carrot and coarsely grate. Place in a bowl with 2 tablespoons white wine vinegar, 1 teaspoon sugar, salt and pepper. Set aside to pickle.

Place the mayonnaise in a bowl and whisk through the miso. Set aside.

Cut the hamburger buns open. Heat a frying pan with 1 tablespoon olive oil and toast the buns on the cut side until golden. Remove from the pan.

Add 2 tablespoons olive oil and fry the hamburgers until golden, about 2-3 minutes on each side.

Spoon the carrot slaw on to the bottom half each bun. Lay a hamburger on each followed by a spoonful of miso mayonnaise. Top with the rocket and serve.

Ingrediënten
2 hamburger broodjes
2 vegetarisch hamburgers, naar keus
4 eetlepels mayonaise
1 eetlepel miso
1 peen van ongeveer 300gr
75gr rucola
2 eetlepels olijfolie
2 eetlepels witte wijnazijn
1 theelepel suiker
zout en peper

Bereiding
Schil de peen en rasp grof. Doe het in een kom met 2 eetlepels witte wijnazijn, 1 theelepel suiker, zout en peper. Zet opzij om te pekelen.

Doe de mayonaise in een kom en klop de miso er doorheen. Zet opzij.

Snijd de broodjes open. Verwarm een koekenpan op medium vuur met 1 eetlepel olijfolie en rooster de broodjes op de gesneden kant goudbruin. Haal ze uit de pan.

Voeg 2 eetlepels olijfolie toe aan de pan en bak de hamburgers goudbruin, ongeveer 2-3 minuten aan elke kant.

Lepel de wortelsalade op de onderste helft van elk broodje. Leg een hamburger op elk broodje, gevolgd door een lepel miso mayonaise. Maak af met de rucola en serveer.


Gnocchi with Porcini and Mushrooms

There are really good ready-made gnocchi available these days. This is a quick and flavourful dinner that you can whip up on a cold evening during a busy week.

Serves 2

Ingredients
400g potato gnocchi
1 small bunch sage
2 cloves garlic
100g chestnut mushrooms
250g container shitake mushrooms
8g dried porcini
125ml cream
75g rocket
4 tablespoons olive oil
salt and pepper

Method
Bring a pan of salted water to the boil. Place the porcini in a bowl with 250 m hot water to reconstitute them. Pick the sage leaves from the stalks. Finely chop the garlic and slice the chestnut mushrooms.

Heat a frying pan over medium heat with 3 tablespoons olive oil and fry the sage leaves until crispy. Remove from the pan and drain on piece of kitchen paper.

Remove the stalks from the shitake and slice the mushrooms. Remove the porcini from the water and chop them finely. Keep the porcini water for the sauce. Add the mushrooms, garlic and porcini to the pan and fry for 5 minutes until golden brown. Add the cream and porcini water to the pan and boil until reduced by a third. Season with salt and pepper.

Add the gnocchi to the pan of boiling water and cook for a few minutes until they float to the surface. Scoop them gently out of the pan and add to the sauce. Mix all the ingredients carefully together.

Dress the rocket with 1 tablespoon olive oil, salt and pepper. Divide the gnocchi between 2 plates. Top with the crispy sage leaves and serve with the rocket salad.

400gr aardappel gnocchi
1 bosje salie
2 teentjes knoflook
100gr kastanjechampignons
250gr shiitake
8gr gedroogde porcini
125ml slagroom
75gr rucola
4 eetlepels olijfolie
zout en peper

Bereiding
Breng een pan water met zout aan de kook. Week de porcini in een kommetje met 250 ml warm water. Pluk de salieblaadjes van de steeltjes. Snijd de knoflook fijn, en de champignons.

Verwarm een koekenpan op medium vuur met 3 eetlepels olijfolie en bak de salieblaadjes knapperig. Haal ze uit de pan en laat op een stukje keukenpapier uitlekken.

Haal de steeltjes van de shitake en snijd ze in plakjes. Haal de porcini uit het water en snijd ze fijn. Bewaar het porcini-water voor de saus. Voeg de paddenstoelen, knoflook en porcini toe aan de pan en bak in 5 minuten goudbruin. Voeg de slagroom en porcini-water toe aan de pan en kook voor 1/3 in. Breng op smaak met zout en peper.

Voeg de gnocchi toe aan de pan met kokend water en kook een enkele minuten tot dat ze boven komen drijven. Schep ze voorzichtig uit het water en voeg toe aan de saus. Meng ze er voorzichtig doorheen.

Meng de rucola met 1 eetlepel olijfolie, zout en peper. Verdeel de gnocchi over 2 borden. Verdeel de blaadjes salie over de 2 borden.


Celeriac and Chestnut Soup

A big bowl of warm soup is often the most simplest of pleasures. This time of year lends itself to such soups. We're inspired by the vegetables and flavours that are in season now. Celeriac and chestnuts are a marriage made in heaven.

Serves 2

Ingredients
1 onion
1 clove garlic
2 sticks celery
1kg celeriac
250g vacuum packed chestnuts
1 bay leaf
2 sprigs thyme
1 organic vegetable stock cube
125ml cream
30g panko breadcrumbs
4 tablespoons olive oil, plus extra to finish the dish
2 cloves
2 juniper berries
salt and pepper

Method

Finely chop the onion and garlic. Peel the celeriac and cut into 2 cm cubes. Finely chop the celery and cut the chestnuts in half. Dissolve the stock cube in 1 litre hot water.

Heat a pot over a medium heat with 2 tablespoons olive oil. Add the onion and celery and fry for 1 minute. Add the celeriac to the pot and fry, stirring regularly, for 5 minutes. Add the chestnuts, bay leaf, thyme sprigs, cloves and stock. Bring to the boil, turn down the heat and simmer for about 15-20 minutes until the celeriac is soft.

Remove the thyme sprigs and bay leaf from the pot. Blend to a thick soup with a stick blender. Season with salt and pepper and stir the cream through the soup. Heat a frying pan over medium heat with 2 tablespoons olive oil. Add the panko and fry until golden brown. Transfer the panko to a small bowl and set aside.

Divide the soup between 2 bowls. Sprinkle with the fried panko and drizzle with a few drops of olive oil.

1 ui

1kg knolselderij
250gr vacuüm zakje kastanjes
1 laurierblad
2 takjes tijm
1 biologisch groenten bouillonblokje
125 slagroom
30gr panko
4 eetlepels olijfolie, en extra voor het afmaken
2 kruidnagels
2 jeneverbessen
zout en peper

Bereiding

Snijd de ui en knoflook fijn. Schil de knolselderij en snijd in blokjes van 2 cm. Snijd de bleekselderij in dunne plakjes. Snijd de kastanjes in tweeën. Los het bouillonblokje op in 1 liter warm water.

Verwarm een pan op medium vuur met 2 eetlepels olijfolie. Voeg de ui en bleekselderij toe aan de pan en smoor 5 minuten. Voeg de knoflook toe en bak nog eens 1 minuut. Voeg de knolselderij toe aan de pan en bak, al roerend, nog eens 5 minuten. Voeg de kastanjes, laurierblad, tijmblaadjes, kruidnagel, jeneverbessen en bouillon toe. Breng aan de kook en laat 15-20 minuten zachtjes koken tot de knolselderij zacht is.

Verwijder het laurierblad en de tijm. Pureer tot een dikke soep met een staafmixer. Breng op smaak met zout en peper en roer de slagroom er doorheen. Verwarm een koekenpan op medium vuur met 2 eetlepels olijfolie. Voeg de panko toe en bak goudbruin. Haal de panko uit de pan en zet opzij in een kommetje.

Verdeel de soep over 2 kommen. Bestrooi met de gebakken panko (broodkruim) en besprenkel met een paar druppels olijfolie.


Brussel Sprouts with Lentils and Hummus

There is no ingredient quite like Brussel sprouts. You either love or loathe them! Most of us have childhood nightmares of the life being boiled out of them. In truth, they're a fantastic ingredient - super versatile and full of flavour. In this recipe, we've married them with flavours of the Middle East. An outstanding vegetarian dish and great way to eat your sprouts!

Serves 2

Ingredients
500g Brussel sprouts
1 x 400g tin lentils
1x 400g tin chickpeas
1 garlic clove
1 tablespoon tahini
1 tablespoon dukkah
2 tablespoons balsamic syrup
3 tablespoons olive oil
salt and pepper

Method

Drain the liquid from the chickpeas and place them in a bowl. Finely chop the garlic clove and add to the chickpeas together with 1 tablespoon tahini and 1 tablespoon olive oil. Blend with a stick blender or food processor until smooth. Season with salt and pepper and set aside.

Clean the Brussel sprouts and cut into quarters. Heat a wok over medium heat with 2 tablespoons olive oil and fry the sprouts for 5 minutes. Season with salt and pepper.

Drain the liquid from the lentils and heat gently in a pan.

Add the balsamic syrup to the spouts and mix well. Keep the sprouts warm.

Divide the hummus between 2 plates, spoon on the lentils and divide over the sprouts. Sprinkle over the dukkah and serve.

Ingrediënten
500gr spruitjes
1 x 400gr blikje linzen
1 x 400gr blikje kikkererwten
1 knoflookteentje
1 eetlepel tahini
1 eetlepel dukkah
2 eetlepels balsamicostroop
3 eetlepels olijfolie
zout en peper

Bereiding

Giet het water van de kikkererwten af en doe ze in een kom. Snijd knoflookteentje fijn, voeg toe aan kikkererwten samen met 1 eetlepel tahini en 1 eetlepel olijfolie. Maak met staafmixer of magimix fijn. Breng op smaak met zout en peper en zet opzij.

Maak spruitjes schoon en snijd ze in vieren. Verwarm een wok op medium vuur met 2 eetlepels olijfolie, wok de spruitjes voor 5 minuten. Breng op smaak met zout en peper.

Giet het vocht van de linzen af en warm ze zachtjes op in een pannetje.

Voeg de vincotto toe aan de spruitjes, meng goed door elkaar en houd warm.

Verdeel de humus over 2 borden, schep de linzen er bovenop en verdeel de spruitjes er overheen. Strooi de dukkah naar smaak over de spruitjes.

 


Kale Caesar Salad

We love the idea of taking a classic and giving a twist using healthy and seasonal ingredients. This twist on a Caesar salad is vegetarian and the perfect salad to eat on cold days.

serves 2

Ingredients
600g baby kale
1 x 400g tin chickpeas
90ml mayonnaise
1 lemon
60g grated Parmesan
2 slices spelt bread
1 teaspoon ground turmeric
8 tablespoons olive oil
1 teaspoon mustard
salt and pepper

Method

Preheat an oven to 200°C. Cut the bread into 2 cm cubes. Place in a roasting dish with 4 tablespoons olive oil and roast in the oven for about 10-15 minutes until golden and crisp.

Drain the liquid from the chickpeas and rinse them under cold water. Dry well on some kitchen paper. In a small bowl, mix the mayonnaise together with 2 teaspoons mustard, a few drops lemon juice, salt and pepper. Thin the dressing down with a little water. It should be the consistency of pouring cream.

Heat a frying pan over medium heat with 4 tablespoons olive oil and fry the chickpeas and turmeric until golden, about 3 minutes. Season with salt and pepper.

Add the baby kale to the pan and fry for a further 2 minutes or until just wilted.

Spoon the kale and chickpeas over 2 plates and drizzle over the dressing. Scatter over the croutons and grated Parmesan before serving.

Ingrediënten
600gr babyboerenkool
1 x 400gr blikje kikkererwten
90ml mayonaise
1 citroen
60gr bakje geraspte Parmezaan
2 sneetjes speltbrood
1 theelepel kurkumapoeder
8 eetlepels olijfolie
2 theelepels mosterd
zout en peper

Bereiding

Verwarm een oven voor op 200°C. Snijd het brood in blokjes van 2 cm. Doe ze in een ovenschaal en meng ze met 4 eetlepels olijfolie. Zet de schaal in de oven voor ongeveer 10-15 minuten totdat ze goudbruin en knapperig zijn.

Giet het vocht van de kikkererwten af en spoel ze af, in een zeef, onder koud water, dep ze droog met wat keukenpapier. Meng in een kommetje de mayonaise met 2 theelepels mosterd, een paar druppels citroensap, zout en peper. Verdun met een beetje koud water tot de dressing de dikte heeft van slagroom.

Verwarm een koekenpan op medium vuur met 4 eetlepels olijfolie en bak de kikkererwten en kurkuma goudbruin voor ongeveer 3 minuten. Breng op smaak met zout en peper.

Voeg de babyboerenkool toe aan de pan en bak nog eens 2 minuten.

Schep de boerenkool over 2 borden en lepel de dressing er overheen. Bestrooi met de croutons en de geraspte Parmezaan.

 

 

 

 

 


Apple sauce

This is great to use with fatty meats such as pork and duck or in desserts. Try and get Bramley apples to make it. They're incredibly tart which works well flavour-wise and they break down to a beautiful thick puree.

Ingredients
5 Bramley apples
50g butter
75g demerara sugar
dash of water
lemon juice to taste
2 pinches cinnamon

Method

Peel, core and slice the apples.

Melt the butter in a pan over medium-low heat. Add the apples, sugar and water and cook gently until the apples are soft and pureed.

Stir in the cinnamon and lemon juice, then transfer to a sterilised jar. Allow to cool before serving.
