Beetroot Salad with Burrata

Ingredients

500 gr cooked beetroot

1 slice sourdough bread

1 ball burrata

1 tsp cumin seed

15 gr dill

1 stalk rosemary

15 gr chervil

1 pack bull’s blood

 

Method

Preheat an oven to 180° C. Cut each beetroot into 6 wedges and place in a roasting dish with 2 tablespoons olive oil, salt and pepper. Place in the oven for 15 minutes.

Break the slice of sourdough bread into crumbs and finely chop the rosemary. Add both ingredients to a bowl with 1 teaspoon cumin seeds and 1 tablespoon sherry or red wine vinegar.

Heat a frying pan over medium heat with 2 tablespoons olive oil and fry the breadcrumbs until golden brown. Place in a bowl and set aside.

Fry ¾ of the bull’s blood in 1 tablespoon olive oil for 10 seconds, season with salt and pepper. Pick the chervil leaves and finely chop the dill. Mix the beetroot together with the herbs and season with salt and pepper.

Divide the bulls blood between 2 plates and spoon the beetroot on top. Tear the burrata between the 2 plates, laying it on top and finish with the uncooked bulls blood leaves.

Ingrediënten

500 gr gekookte biologische bieten (500 gram)

1 snee zuurdesembrood

1 bolletje burrata

1 theel komijnzaad

15 gr dille

1 takje rozemarijn

15 gram kervel (15 gram)

1 zakje bullsblood

 

Bereiding

Verwarm de oven voor op 180 C. Snijd de bietjes in 6 partjes en doe ze in een ovenschaaltje met 2 eetlepels olijfolie, zout en peper. Zet ze in de oven voor 15 minuten.

Verkruimel de snee zuurdesembrood en hak rozemarijn fijn, doe alles in een kom met 1 theelepel komijnzaad en 1 eetlepel sherryazijn.

Verwarm een koekenpan op medium vuur met 2 eetlepels olijfolie en bak broodkruim goud- bruin. Doe ze in een kommetje. Bak ¾ van het bullsblood met 1 eetlepel olijfolie voor 10 seconden, breng op smaak met zout en peper. Pluk de kervelblaadjes en snijd de dille fijn. Doe de bietjes samen met de kruiden in een kom, breng op smaak met zout en peper.

Verdeel het bullsblood over 2 borden. Schep de bietjes er bovenop. Leg de burrata er bovenop en maak af met het  resterende bullsblood.

 

 

 

 


Slow-roasted cherry tomatoes

Beautiful sweet roasted tomatoes! You can use them on crostini's with ricotta or in a salade with burrata and basil

Ingredients:

500 gram sweet small cherry tomatoes

1 tbsp olijfolie

1 tsp kosher salt

1/2 teaspoon fresh pepper

Preparation:

Preheat the oven to 150 C

Put a baking sheet on an oven rack and place the tomatoes on top.

Brush the tomatoes with the olive oil and season with salt and pepper.

Place the tomatoes in the oven until their skines are shriveled, but the tomatoes are still plump, about  75 min.

 


Parsley oil

Leftover flat leaf parsley you can use it for parsley-oil, great combination with asparagus soup

PARSLEY OIL

Ingredients

1 small bunch flatleaf parsley, roughly chopped

100ml extra virgin olive oil

1 glove garlic

Juice of lemon to taste

Salt and pepper

Method

Place the parsley, garlic, juice of lemon to taste and olive oil into a food processor and blend until smooth. Season with salt and pepper. Place a sieve over a bowl and pour the parsley oil into the sieve. Press through the sieve if you prefer to collect the bright green parsley oil.

 

BLADPETERSELIE OLIE

Ingrediënten

1 klein bosje bladpeterselie

1o0 ml extra virgin olijfolie

1 teentje knoflook, grof gehakt

Citroensap van 1/2 citroen naar smaak

Zout en peper

Bereiding

Snijd de bladpeterselie grof. Doe de peterselie, knoflook, citroen naar smaak en olijfolie in een blender en blend deze fijn.

Breng op smaak met zout en peper.

Mocht je een heldere peterselie olie willen, giet de olie dan door een zeef


Bulgur Salad with Butternut Squash and Feta

Lets start the week on a light and healthy note with the salad containing delicious roasted butternut squash, bulgur and fresh baby spinach. The addition of acidic feta pairs beautifully with the sweetness of the butternut.

Serves 2

Ingredients
1,2kg butternut squash
30g harissa
100g bulgur
2 limes
1 red onion
75g feta
1 small bunch coriander
150g baby spinach
50g pumpkin seeds
6 tablespoons olive oil
salt and pepper

Method
Preheat the oven to 200° C. Peel the butternut, remove the seeds and cut into 3 cm pieces. Transfer to a roasting dish and mix with the harissa, 3 tablespoons olive oil, salt and pepper. Roast in the oven for 30 minutes. Once cooked, remove from the oven and allow to cool slightly.

Place the bulghar in a pot and add enough water until the bulghar is covered. Bring to the boil, turn down the heat and simmer gently for about 15 minutes. Drain off the excess water and cool slightly.

Finely chop the onion and coriander. Squeeze the juice of 1 lime into a bowl and add the chopped onion. Allow to stand for 5 minutes. Add the bulghar, crumbled feta, pumpkin, coriander and spinach to the bowl. Season with salt and pepper.

Roast the pumpkin seeds in a dry frying pan for 2-3 minutes. Finely chop half the seeds and add to a bowl with the juice of the remaining lime and 3 tablespoons olive oil. Season with salt and pepper. Scatter the salad with the whole seeds and spoon the dressing over.

Bereiding
Verwarm de oven voor op 200 °C. Schil de flespompoen, verwijder de zaadjes en snijd in stukjes van 3 cm. Zet ze in een ovenschaal en meng met de harissa, 3 eetlepels olifolie, zout en peper. Rooster voor 30 minuten in de oven. Laat iets afkoelen.

Doe de bulgar in een pannetje en voeg water toe totdat de bulgar onder staat. Breng aan de kook, laat 15 minuten zachtjes koken en giet af. Laat het licht afkoelen.

Snijd de ui in kleine blokjes en hak de koriander fijn. Doe het sap van een limoen in een kom en voeg het gesneden uitje toe en laat dit 5 minuten staan. Voeg de bulgar, gekruimelde feta, pompoen, koriander en spinazie toe. Breng op smaak met zout en peper.

Rooster de pompoenzaadjes in een droge koekenpan voor 2 tot 3 minuten. Hak ½ van de zaadjes fijn en doe het in een kommetje. Voeg de resterende limoensap en olijfolie toe aan de gehakte zaadjes en breng op smaak met zout en peper. Bestrooi de salade met de hele zaadjes en lepel de dressing erover heen.


Herby Lentils with Spinach and Smoked Mackerel

A dish which is light and incredibly healthy, full of omega 3 and protein and fibre.

Serves 2

Ingredients
100g puy lentils
1 lemon
a small bunch each of basil, mint and flat leaf parsley
2 spring onions
2 fennel bulbs
1 ripe avocado
125g baby spinach leaves
2 smoked mackerel fillets
1 teaspoon sumac
1 teaspoon black sesame seeds
4 tablespoons olive oil
1 teaspoon Dijon mustard
salt and pepper

Method
Place the lentils in a small pan, cover with water and add a little salt. Bring to the boil and simmer gently for 15-20 minutes. Drain the lentils off and transfer to a bowl. Finely chop the herbs and spring onions.

Make the dressing: place the Dijon mustard in a bowl and add lemon juice to taste, salt and pepper. Whisk 4 tablespoons through. Mix the herbs, spring onions and lentils through the dressing and set aside.

Finely slice the fennel bulbs and break the mackerel fillets into chunks.

Peel the avocado and slice thinly. Mix the spinach and fennel through the lentils. Divide the salad between 2 plates.

Divide the mackerel pieces and avocado slices over the salad. Sprinkle over the sumac and black sesame seeds and serve.

100gr puy linzen
1 citroen
1 klein bosje elk basilicum, munt en bladpeterselie
2 lente uien
2 venkel
1 rijpe avocado
125 gr baby spinazieblaadjes
2 gerookte makreelfilets
1 theelepel sumac
1 theelepel zwarte sesamzaadjes
4 eetlepels olijfolie
1 theelepel Dijon mosterd
zout en peper

Bereiding
Doe de linzen in een pannetje met water en zout en breng aan de kook. Kook ze zachtjes 15-20 minuten. Giet af en doe in kom. Snijd de kruiden en lente uien fijn.

Maak de dressing in een kom: meng 1 theelepel Dijon mosterd met citroensap naar smaak, zout en peper, klop er 4 eetlepels olijfolie doorheen. Schep de kruiden, lente uien en linzen door de dressing en zet opzij.

Snijd de venkel in dunne reepjes en breek de makreelfilets in grove stukken.

Snijd de avocado in dunne plakjes en meng samen met de spinazieblaadjes en venkel door de dressing. Verdeel de salade over 2 borden.

Verdeel de stukjes makreel er overheen, bestrooi met de sumac en zwarte sesamzaadjes en serveer.


Kale Caesar Salad

We love the idea of taking a classic and giving a twist using healthy and seasonal ingredients. This twist on a Caesar salad is vegetarian and the perfect salad to eat on cold days.

Ingredients
600g baby kale
1 x 400g tin chickpeas
90ml mayonnaise
1 lemon
60g grated Parmesan
2 slices spelt bread
1 teaspoon ground turmeric
8 tablespoons olive oil
1 teaspoon mustard
salt and pepper

Method

Preheat an oven to 200°C. Cut the bread into 2 cm cubes. Place in a roasting dish with 4 tablespoons olive oil and roast in the oven for about 10-15 minutes until golden and crisp.

Drain the liquid from the chickpeas and rinse them under cold water. Dry well on some kitchen paper. In a small bowl, mix the mayonnaise together with 2 teaspoons mustard, a few drops lemon juice, salt and pepper. Thin the dressing down with a little water. It should be the consistency of pouring cream.

Heat a frying pan over medium heat with 4 tablespoons olive oil and fry the chickpeas and turmeric until golden, about 3 minutes. Season with salt and pepper.

Add the baby kale to the pan and fry for a further 2 minutes or until just wilted.

Spoon the kale and chickpeas over 2 plates and drizzle over the dressing. Scatter over the croutons and grated Parmesan before serving.

1 x 400gr blikje kikkererwten
90ml mayonaise
1 citroen
60gr bakje geraspte Parmezaan
2 sneetjes speltbrood
1 theelepel kurkumapoeder
8 eetlepels olijfolie
2 theelepels mosterd
zout en peper

Bereiding

Verwarm een oven voor op 200°C. Snijd het brood in blokjes van 2 cm. Doe ze in een ovenschaal en meng ze met 4 eetlepels olijfolie. Zet de schaal in de oven voor ongeveer 10-15 minuten totdat ze goudbruin en knapperig zijn.

Giet het vocht van de kikkererwten af en spoel ze af, in een zeef, onder koud water, dep ze droog met wat keukenpapier. Meng in een kommetje de mayonaise met 2 theelepels mosterd, een paar druppels citroensap, zout en peper. Verdun met een beetje koud water tot de dressing de dikte heeft van slagroom.

Verwarm een koekenpan op medium vuur met 4 eetlepels olijfolie en bak de kikkererwten en kurkuma goudbruin voor ongeveer 3 minuten. Breng op smaak met zout en peper.

Voeg de babyboerenkool toe aan de pan en bak nog eens 2 minuten.

Schep de boerenkool over 2 borden en lepel de dressing er overheen. Bestrooi met de croutons en de geraspte Parmezaan.

 

 

 

 

 


Bulgur Salad with Roasted Carrot and Tenderstem Broccoli

Enjoy a relaxed Sunday and end it with a healthy and exciting salad, sipping a glass of wine and watching the sun slowly dip into the horizon.

Ingredients
200g bulgur wheat
2 carrots
300g tenderstem broccoli
1 bunch mint
75g pecan nuts
1 lime
5 tablespoons pomegranate syrup
4 tablespoons olive oil
salt and pepper

Method
Preheat an oven to 200°C. Bring a pan of salted water to the boil. Peel the carrot and finely slice diagonally. Cut the hard stalk ends off the broccoli.

Place the carrot and broccoli, 3 tablespoons olive oil, salt and pepper in a roasting dish and roast in the oven for about 15 minutes.

Place the bulgur in the pan of boiling water and simmer until cooked, about 10-12 minutes. Drain off the water from the bulgur.

Heat a frying pan over medium heat with 1 tablespoon olive oil and roast the pecan nuts until golden. Pick the mint leaves and finely slice into thin strips.

Roughly chop the pecan nuts. Mix the roasted vegetables with half the mint and lime juice to taste. Season with salt and pepper. Spoon the salad on to a plate, sprinkle over the remaining mint and pecan nuts and drizzle the pomegranate syrup over.

200gr bulgur
2 wortelen
300gr bimi
1 bosje munt
75 gr pecannoten
1 limoen
5 eetlepels granaatappelsiroop
4 eetlepels o lijfolie
zouten peper

Bereiding
Warm de oven voor op 200 C. Breng een pannetje water met zout aan de kook. Schil de wortel en snijd in dunne schuine plakjes. Snijd de harde uiteinden van de bimi af.

Doe de wortel samen met de bimi, 3 eetlepels olijfolie, zout en peper in een ovenschaaltje, rooster in de oven voor 15 minuten.

Doe de bulgur in het pannetje met kokend water en kook gaar in ongeveer 10-12 minuten. Giet water af van de bulgur af.

Verwarm een koekenpan op medium vuur met 1 eetlepel olijfolie, rooster hierin de pecannoten goudbruin. Pluk de blaadjes van de munt en hak fijn in dunne reepjes.

Hak de pecannoten grof. Meng de geroosterde groenten door de bulgur met de helft van de munt en sap van limoen naar smaak, zout en peper. Schep de salade op het bord, bestrooi met de resterende munt en pecannoten, drizzel er granaatappelsiroop overheen.


Light summer salad

As a light lunch for 3 or for 4 as starter

Ingredients
500g cooked organic beetroot
1 tablespoon sherry vinegar
50g curly kale leaves
70ml creme fraiche
2 teaspoons prepared horseradish
1 fennel bulb
100g sliced smoked halibut
1 lemon
4 tablespoons extra virgin olive oil
salt and pepper

Method

Cut the beetroot into thin segments and place in a bowl. Add 1 tablespoon sherry vinegar, 2 tablespoons olive oil, salt and pepper and leave to marinate.

Shave the fennel thinly on a mandolin or with a sharp knife and place in a bowl. Add 2 tablespoons olive oil, lemon juice to taste, salt and pepper. Leave this too to marinate.

Mix the creme fraiche with the horseradish, salt and pepper and set aside.

To serve, spoon some of the horseradish creme fraiche on the base of each plate. Top with the shaved fennel, followed by the beetroot.

Drape pieces of the smoked halibut around and top with the curly kale leaves. Drizzle over the dressing left from marinating the beetroot and serve.

 


Chorizo, Avocado and Roasted Pepper Bowl

A great use of summer Spanish flavours in a healthy and spicy bowl.

Serves 3

Ingredients
3 fresh chorizo sausages
3 red peppers
3 tablespoons sherry vinegar
2 ripe avocado’s
1 lemon
1 ciabatta roll
1 tin chickpeas
125g baby spinach leaves
7 tablespoons olive oil
salt and pepper

Method
Preheat an oven to 200°C. Rinse the peppers and place on an oven tray. Drizzle with 2 tablespoon olive oil and roast in the oven until the skins are black, about 20 minutes. Alternatively, place the peppers over an open gas flame until blackened. Place the peppers in a bowl and cover with plastic wrap. Leave to stand until slightly cooled so the skins peel off easier.

Break the ciabatta into chunky pieces and drain the liquid from the chickpeas. Place both on an oven tray and drizzle with 3 tablespoons olive oil, salt and pepper. Roast in the oven for about 10 minutes.

Heat a frying pan over medium heat with 2 tablespoons olive oil and fry the chorizo sausages until golden brown, about 12 minutes. Peel the peppers, remove the seeds and cut into thin strips.

Add the sherry vinegar to the pan with sausages and allow to reduce slightly. Remove the sausages from the pan and cut into diagonal slices. Halve and peel the avocado’s and cut into thin slices.

In a bowl, mix together 2 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon lemon zest and the reduced vinegar from the pan. Place some baby spinach leaves into a serving bowl and spoon avocado and peppers next to the spinach. Add the chorizo and chickpea-ciabatta crumb to the bowl and spoon over the dressing.

3 stuks verse chorizo worstjes
3 rode paprika
3 eetlepels sherryazijn
2 rijpe avocado’s
1 citroen
1 ciabatta broodje
1 blikje kikkererwten
125g baby spinazieblaadjes
7 eetlepel olijfolie
zout en peper

Bereiding
Verwarm een oven voor op 220°C. Spoel de paprika’s af en leg ze op een bakplaat. Besprenkel met 2 eetlepels olijfolie en rooster ze in de oven totdat de schil zwart is in ongeveer 20 minuten, of leg ze op een vlam van gasfornuis totdat ze zwart worden. Doe de paprika’s in een kom, dek af met plasticfolie en laat enkele minuten staan.

Breek de ciabbata in grove stukjes en giet het water van de kikkererwten af. Leg beide ingrediënten op een bakblik en besprenkel ze met 3 eetlepels olijfolie, zout en peper. Zet het blik in de oven voor ongeveer 10 minuten.

Verwarm een koekenpan met 2 eetlepels olijfolie en bak de chorizoworstjes hierin goudbruin, ongeveer 12 minuten. Schil de paprika’s, haal de zaadjes eruit en snijd ze in dunne reepjes.

Voeg de sherryazijn toe aan de pan met de worstjes en kook licht in. Haal de worstjes uit de pan en snijd ze in schuine plakjes. Haal de schil van de avocado en snijd in dunne plakjes.

Meng in een kom 2 eetlepels olijfolie, 1 eetlepel citroensap, 1 theelepel citroenrasp en de ingekookte azijn uit de pan. Leg wat bladspinazie in de kom, lepel wat avocado en paprika naast de spinazie, leg daarnaast wat chorizoworstjes en daarnaast wat kikkererwten en ciabatta. Lepel de dressing er overheen.


Beetroot

Beetroot, freshly harvested, are super-sweet, ready to eat after boiling for a much shorter time and just delicious without anything added. The balance of the sweetness and almost liquorice lingering aftertaste is amazing.

This is a two-in-one vegetable because the young leaves and the root are both edible. In the old days, beetroot was quite ordinary – cooked and served as a salad with sweet vinegar, or commercially pickled, causing everything else on the plate to turn red.

Nowadays, however, the humble beetroot has reinvented itself. It’s trendy for good reason: its health benefits are numerous (beetroot is a rich source of nutrients), and its versatility makes it ideal for use in all types of cuisine. Different varieties of beetroot now being cultivated are still finding their way into the market. Even the young leaves can be steamed or boiled – they have the taste and texture of spinach.

BEETROOT FOR BREAKFAST

  • in a fresh juice with ginger and fresh apple
  • in a beetroot soufflé with melting Gorgonzola
  • scrambled eggs on toast with beetroot chutney

BEETROOT IN A SALAD

  • cook with roasted butternut and toasted pumpkin seeds; serve with a cinnamon and balsamic reduction dressing
  • cook and slice with pitted fresh cherries, raspberries, sliced baby radish and red basil; toss with walnuts and a walnut dressing
  • cook and grate over a potato salad with a mustard and lemon vinaigrette
  • top julienned fresh carrots with fresh julienned beetroot and thinly sliced shallots; serve with an orange and dill dressing with grated orange rind
  • cook and top with rocket and an anchovy dressing

BEETROOT FOR LUNCH OR DINNER

  • cook and bake in a quiche with prosciutto, Parmesan and caperberries
  • cook and peel whole beetroot while still warm; serve with Boursin, toasted pine nuts and pomegranate syrup, seasoned with salt and freshly cracked black pepper
  • cook or pickle as part of a beef or ostrich burger with a generous dollop of beetroot and onion chutney
  • top a carpaccio of raw beetroot with lightly smoked grilled trout; serve with a horseradish dressing and warm crusty bread
  • slice beetroot on a toasted baguette with ham and melting Brie; top with a beetroot pickle
  • as a warm creamy soup with lightly smoked mussels
  • in a risotto with star anise and shaved Parmesan
  • as part of a vegetarian lasagne, using only cooked sliced beetroot and steamed beet greens with sautéed red onion and béchamel sauce; top with Gorgonzola and Parmesan
  • roast and serve with seared duck breast and a ground coriander and orange sauce

PINK BAKING AND COOKING WITH BEETROOT

  • add beetroot coulis to your favourite cheesecake recipe
  • add grated beetroot to your rich chocolate cake to keep the cake moist and give a dark red colour
  • add a little beetroot juice to icing for a pink colour
  • add a little beetroot juice when melting white chocolate for drizzling over cake or any baked goods
  • add beetroot juice to waffle mixture to make pink waffles
  • add a little beetroot juice to cooked rice
  • enhance any red or pink colour with beetroot juice instead of food colourant

TIP: ABOUT THOSE BEETROOT STAINS…

Beetroot is a water-soluble dye; using hot water will react as a fixative for stronger colour. Use cold water and rub your hands with salt and lemon juice to remove stains on your skin. For stains on fabric, rub raw pear on the mark before washing in cold water. Then wash with soap.
